White Turkey Chili Instructions
1 Tbls Olive Oil
1 Med Onion, diced (about 1 ½ Cups)
2 Stalks Celery, diced (about ½ Cup)
3 Medium Poblano peppers (about 4 oz each), seeded with white ribs removed finely diced (about 1 ½ cups)
1 clove Garlic minced
1 Tsp ground Cumin
½ Tsp ground Coriander
¼ Tsp Cayenne Pepper, more to taste
1 Lb ground Turkey (may substitute chicken)
2 (15.5 oz) cans white beans such as Cannellini, drained and rinsed
4 Cups Low Sodium Chicken Stock
¾ Tsp dried Oregano
1 (15.5 oz) can Hominy, drained and rinsed
Instructions
Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, celery, poblanos, and cook, stirring occasionally, until the vegetables are soft, about 8 minutes. Add the garlic, cumin, coriander, and cayenne and cook, stirring until fragrant, about 30 seconds.
Add the ground turkey and cook, breaking up the meat with a spoon, until the meat is no longer pink, about 2 minutes. Add the white beans, broth, ard oregano. Cook, partially covered, stirring occasionally, for 25 minutes.
Add the hominy and more cayenne pepper to taste and continue cooking, partially covered, 10 minutes longer.

Ingredients
1 Medium Onion, chopped
4 Garlic cloves, minced
2 pounds Ground turkey
2 (4 ounce) Cans diced green chilies
1 tbsp Ground cumin
1 tbsp Dried oregano
1 tsp Ground cinnamon
1 tbsp Chipotle powder
2 tsp Ground white pepper
2 (15 ounce) Cans cannellini beans, drained and rinsed
6 cups Chicken broth
Salt to taste
Garnishing:
Shredded Monterey Jack cheese
Cilantro
Avocado
1. In a large pot over medium heat, saute the onions, garlic, and ground turkey.
2. Season Turkey with Blazing Star All in One seasoning or with salt and Pepper. Cook until turkey has browned.
3. Add the diced chilies, cumin, oregano, cinnamon, chipotle powder, and white pepper.
4. Add the beans and the chicken broth.
5. Add salt to taste.
6. Serve with shredded cheese, sliced avocado, and cilantro.

Ranch-Style Turkey Chili

Ingredients
4 poblano peppers
2 large corn muffins, store-bought
2 tablespoons EVOO
2 pounds ground turkey
Kosher salt and freshly ground black pepper
4 cloves garlic, finely chopped
1 large onion, finely chopped
2 tablespoons cumin, a couple of palmfuls
1 tablespoon coriander, a palmful
One 14-ounce can pinto or white beans
2 cups chicken stock
1/4 cup fresh chives, finely chopped
1/4 cup fresh dill, finely chopped
1/4 cup fresh parsley, finely chopped
Hot sauce
1 cup sour cream
Optional Toppers:
Shredded sharp Cheddar
Minced red onion
4 to 5 slices crispy bacon, chopped
Directions
Char the peppers over a gas flame on high heat or under the broiler with the oven door cracked for steam to escape, turning with tongs. Place the charred peppers in a bowl and cover with plastic wrap to steam. Let them cool, then peel, seed and finely chop.
Preheat the oven to 400 degrees F.
Crumble the corn muffins, arrange on a cookie sheet and toast until crispy and extra golden, about 10 minutes. Set aside.
Heat the EVOO in a Dutch oven over medium-high heat. Add the turkey and sprinkle with salt and pepper. Brown and crumble the meat. Add the garlic and onions to the pot and cook to soften, about 5 minutes. Add the cumin and coriander, then stir in the chopped peppers. Add the beans, stock and herbs and simmer 5 minutes. Season with hot sauce.
Turn off the heat and stir in the sour cream to combine. Serve topped with the crispy corn muffin crumbles and any of the other toppings you like.
