How To make Um'Bido (Greens & Peanuts)
2 lb Spinach, cooked
1 c Peanuts, coarsely ground
2 tb Oil
1/2 ts Salt
1/4 ts Pepper
Cook spinach in enough water to cover. After 4 or 5 minutes, sprinkle in the peanuts & stir well. Continue cooking over medium heat for about 30 minutes, adding more water if necessary to prevent burning. Just befroe serving, drain & mix in the oil, salt & pepper.

Today we are going to make beetroot carrot and cucumber salad with peanut dip.
An Indian salad that is packed with flavor nutrients vitamins and minerals and that can go really well with absolutely any Indian meal.
Beetroot carrot and cucumber salad with peanut dip is also a diabetic friendly so let's get started!
Step 1: Here we take 2 to 3 cucumbers, 1 carrot and 1 beetroot.
Step 2: Wash them properly with water.
Step 3: Now peel the vegetables properly and grate the vegetables and keep it aside.
Step 4: Now serve on salad plate with lattice leaf and spinach flavor and with one sliced tomato chop and sprinkle soaked almonds and berries. Now our salad is ready!
Step 5: So we prepare peanut dip now. It will hardly take 2 to 3 minutes. First, we take 5 to 6 garlic cloves and 2 green chili.
Step 6: Dry roast in a pan.
Step 7: Now take 1 bowl of peanuts. Dry roast again. Now we put all the ingredients in the grinder jar, few coriander leaves, 2 to 3 tablespoon fresh curd and salt according to the taste.
Step 8: Grind it nicely and make a fine paste. Now your peanut tip is also ready!
Now enjoy your salad with peanut dip :-)
