2 tb Salad oil 1 tb Worcestershire 2 Egg whites 2 lb Unsalted peanuts 3 To 5 T. cayenne pepper With salad oil, grease two 15x10x1" jelly roll pans. Preheat oven to 250. In a large bowl beat egg whites until soft peaks form. Fold in cayenne and Worcestershire. Add peanuts and toss until evenly coated. Spread half the peanuts into each pan. Bake 45 minutes, stirring every 15 minutes. Cool on wire rack.

PREPARATION 1. Heat 1 tablespoon ghee in a heavy skillet and add 200 grams jaggery to it. 2. Melt it and once it begins to bubble, lower the heat to minimum. Keep cooking and stirring the jaggery all along. 3. When the jaggery has melted completely add 150 grams peanuts and mix well. 4. Immediately transfer the mixture onto the greased tray and spread with a rolling pin. Dab some ghee on the surface and cut into squares when still hot. 5. Cool it for 30 minutes. 6. Serve and enjoy.
