CRUST:

CHEESECAKE 2 c Cottage Cheese
3 Eggs :
Large, Separated
1/2 c Sugar Granulated
1/2 c Sour Cream
2 ts Cornstarch
1 t Lemon Peel :
Grated
1/2 c Walnuts -- Chopped, (Optional)
Preheat the oven to 325 degrees F. Press the cottage cheese through a sieve and drain. In a large mixing bowl, beat the egg yolks until light an foamy, then add the sugar slowly, continuing to beat until very light and smooth. Add the cottage cheese to the egg mixture, blending well, then add the sour cream, cornstarch, lemon rind, and walnuts (if desired). Stir until all ingredients are well blended and the mixture is smooth. In another large mixing bowl, beat the egg whites until they form soft peaks, then gently fold them into the batter. Pour the mixture into the prepared crust and bake for about 1 hour. Cool to room temperature before serving.

Ukrainian cheesecake preparation from the first-person view
Ingredients
700g cottage cheese ( or blend 650g of paneer with a blender and mix it with 100 g of non-sweet yogurt)
4-5 eggs
5-6 tbsp of flour or semolina
one anis star
5-6 tbsp of sugar
fruits (I used 4 plums and 1 apple)
2 pinch of salt
1 teaspoon of vanilla extract or
Crush one anis star with one tbsp of sugar
Mix all ingredients but fruits. Let the mixture stand for 15 minutes to allow the semolina to absorb a bit of the moisture.
Peel and slice an apple. Slice plums. Add to mixture.
Grease the baking pan with butter and put the mixture.
Bake 30-35 minutes at 180C/360F. Let the cheesecake cool down in the oven for 10-15 minutes.
Serve with sour cream or fruit puree.

How to make Zapekanka aka Russian Cheesecake made from Farmer's Cheese or Tvorog. Dessert
Easy Recipe of Zapekanka with step by step instructions.
Ingredients: ( 6-8 servings )
Farmer’s Cheese ( Tvorog ) - 900g ( you can use reduced fat or full fat product. I am using home made version made with whole milk)
Eggs - 4pcs
Vanilla extract - 1 teaspoon
Baking soda - 1 teaspoon
Lemon zest & lemon juice - from ½ lemon
Semolina ( aka Manka grain ) - 5 tablespoons
Sour-Cream or Yogurt - 3 tablespoons
Salt - 1 teaspoon
Dry Raisins - ½ cup
Dry Cherries - ½ cup ( you can use any other dry fruits as well )
Avocado or Olive oil - 2 tablespoons

Hi Everyone,
Today we will be making a classic breakfast or a dessert type dish with Russian roots which called Zapekanka / Запеканка. Zapekanka is very similar to cheesecake, typically made with Farmer’s cheese and optionally dried fruits. It is super easy to make, and if you will try it once it will become one of your favorite breakfast dishes.
Today I will be making Zapekanka out of homemade Farmer’s Cheese also called Tvorog.
Step#1
Combine all the ingredients in the large bowl except dry fruits. We will add dried fruits later.
Soak dry fruits in boiling water for about 5-10 minutes. I am using a mix of raisins and dry cherries. This small step helps to prevent dry fruits from soaking up all the moisture during baking.
Combine all the ingredients using a hand mixer and let it sit for about 15 minutes for semolina to expand.
Step#2
Combine dry fruits with the farmer’s cheese mix and give it a few swirls.
Take a casserole type dish and spray it with oil. Add the farmer’s cheese mix and it is ready to bake.
Preheat the oven to 375°F and bake it for about 40 minutes. I overcooked mine a little bit, but it still turned out really really good.
Let zapiekanka cool down a bit before trying. You can serve it warm for breakfast with sourcream, jam or honey or as a delicious dessert after a meal.
