Ingredients for Kung Pao Chicken
(Tsp- Teaspoon; Tbsp- Tablespoon )
- Chicken, boneless thigh pieces cubed- 450 gms (1 lb)
For marination:
- Salt-1/2 tsp
- Pepper powder- 1/4 tsp
- Dark Soy Sauce- 1 tbsp
- Corn flour - 4 tsp
- Brown or white sugar- 1 tsp
- Sesame oil- 2 tsp
Vegetables:
- Green Zucchini- 125 gms cubed
- Red Bell Pepper- 125 gms cubed
- Roasted Peanuts - 1/4 cup
- Garlic, chopped -6 cloves (9-10 gms)
- Ginger, fine chopped - 1 tsp
- Red chillies - 8 (cut into 1/2 “ pieces)
- Spring onion greens cut into 1/2 “ pieces - 4-5 tbsp
Kung Pao Sauce:
- Low sodium Soy Sauce- 1 tbsp
- Rice Vinegar- 1/2 tbsp (or 1 tbsp Rice wine)
- Hoisin Sauce- 2 tsp (mixed in 1/2 tbsp water if it’s thick)
- Sugar- 1 tbsp
- Water -4 tbsp
- Cornstarch- 1 tsp
Other Ingredients:
- Oil- 2 tbsp
Preparation:
- Marinate chicken pieces for 30 mins.
- Prepare the Kung Pao Sauce- Add all the items for the sauce in a bowl. Mix/whisk well. Set aside.
- Cut the boneless chicken thighs into cubes.
- Also cut the zucchini & red pepper into cubes. Cut the spring onion greens into small pieces
Process :
- Heat 1.5 tbsp oil in a wok. Add the marinated chicken pieces and stir fry on high heat for 3 mins till browned
- Remove and set aside for use later.
- In the remaining oil, add 1/2 tbsp oil and heat it. Now add the cut red Chillies, chopped ginger & garlic. Stir fry on high heat for around 30 secs
- Add the cubed zucchini & red bell peppers. Season with a pinch of salt & pepper powder.
- Mix and stir fry on high heat for 3 mins
- Add back the fried chicken & the roasted peanuts . Mix & stir fry for 2 mins on high heat.
- Lastly add the prepared Kung Pao Sauce & spring onions. Stir fry for 2 mins on medium heat.
- Serve hot with noodles or fried rice.

Prepare Schezwan Chicken:
-Chicken julienne cut 500g
-Soy sauce 2 tbs
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Cornflour 3 tbs
-Chawal ka atta (Rice flour) 2 tbs
-Kashmiri lal mirch (Kashmiri red chilli) soaked 1
-Thai red chillies 3-4
-Water 3-4 tbs
-Tomato ketchup 3 tbs
-Hoisin sauce 2 tbs
-Sugar ½ tbs
-Soy sauce 3 tbs
-Sirka (Vinegar) 1 tbs
-Namak (Salt) ½ tsp or to taste
-Cornflour 1 & ½ tbs
-Water ½ Cup or as required
-Cooking oi 3-4 tbs
-Adrak (Ginger) chopped 1 tbs
-Lehsan (Garlic) chopped ½ tbs
-Sukhi lal mirch (Dried red chillies) 3-4
-Pyaz (Onion) thick slices 1 Cup
-Yellow bell pepper julienne 1 Cup
-Hara pyaz (Spring onion) leaves chopped
Prepare Corn Fried Rice:
-Cooking oil 1-2 tbs
-Anday (Eggs) 2
-Cooking oil 2-3 tbs
-Lehsan (Garlic) chopped ½ tbs
-Gajar (Carrots) chopped ½ Cup
-Shimla mirch (Capsicum) chopped 1 Cup
-Corn kernels boiled 1 & ½ Cup
-Chawal (Rice) boiled 2 & ½ Cups
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Chicken powder 1 tbs
-Sirka (Vinegar) 1 tbs
-Soy sauce 2 tbs
-Hara pyaz (Spring onion) chopped ½ Cup
Directions:
Prepare Schezwan Chicken:
-In a bowl,add chicken,soy sauce,salt,black pepper powder,cornflour,rice flour & mix well,cover & marinate for 15 minutes.
-In a spice mixer,add kashmiri red chilli,thai red chillies & water,grind well & set aside.
-In a bowl,add tomato ketchup,hoisin sauce,sugar,soy sauce,vinegar,salt,cornflour,water,mix well & set aside.
-In a wok,add cooking oil,marinated chicken & cook on medium flame until light golden (4-5 minutes) & set aside.
-In the same wok,add ginger,garlic & mix well.
-Add dried red chillies,mix well & sauté for a minute.
-Add blended chilli paste,mix well & cook for 1-2 minutes.
-Now add fried chicken & mix well.
-Add onion,yellow bell pepper & mix well.
-Add prepared sauce mixture,mix well & cook until sauce thickens (1-2 minutes) then cook on high flame for 1-2 minutes.
-Sprinkle spring onion leaves.
Prepare Corn Fried Rice:
-In a wok,add cooking oil,eggs & cook until it crumbles & set aside.
-In the same wok,add cooking oil,garlic & fry until light golden.
-Add carrots,capsicum,corn kernels,mix well & sauté for 1-2 minutes.
-Add boiled rice & mix well.
-Add salt,black pepper powder,white pepper powder,chicken powder & mix well.
-Add vinegar,soy sauce,spring onion & mix well.
-Add cooked egg & give it a good mix.
-Garnish with green onion leaves & serve schezwan chicken with corn fried rice!

In this Chinese street food video, we're bringing you on a full on Dan Dan noodle tour of Chengdu, China, DEEP in the heart of Sichuan in Southwest China. This is the land of delicious and spicy Sichuan cuisine, sometimes spelled Szechuan cuisine. There are so many famous Sichuan foods to try here in Chengdu, but today, we are trying 4 different variations of Dan Dan noodles, also sometimes called Zajiang noodles.

China has so many amazing street foods to try, and I've been filming and documenting them for you for the past 4 years. In my opinion, the best noodle dish in China is dan dan noodles, right here in Chengdu, Sichuan. China has some of the best street food around the world, and these dan dan noodles were INSANELY GOOD, some of the best noodles in China for sure!
If you're traveling to China to eat and try different street foods, and perhaps want to learn a little bit about Chinese food and chinese cooking in the process, you need to try a few different variations of Dan Dan noodles. When they prepare the traditional Chinese dan dan noodle recipe right on the street, you can watch as they scoop the main ingredients like chili oil, soy sauce, sichuan peppercorn, and garlic right into the noodle bowl and then place the steaming hot noodles right over top. It's truly satisfying! After they put the noodles over top, they place their signature fried ground pork on top, known in Chinese as shaozi.
When your dan dan noodles arrive to your table, it is very important to mix up all the chili oil and all of the ingredients throughout. This ensures that the flavour and the hot oil gets coated onto each noodle before you take a bite. It's also quite satisfying mixing the noodles and watching the dark red oil slowly turn each noodle from white into red and silky smooth.
When you take your first bite, you'll understand why this is one of the BEST Chinese street foods you need to try. The spicy noodles are coated with an incredibly aromatic chili oil and really send you straight up to heaven! It's one of the best forms of Chinese cooking!

Ingredients for Mongolian Chicken Stir Fry:
(Tsp- Teaspoon; Tbsp- Tablespoon )
Boneless Chicken - 300 gms (cut into 2 inch strips)
Marinate with:
- White Pepper powder- 3/4 tsp
- Salt- 1/2 tsp
Light soy sauce: 1 tsp
Batter/2nd Marinade:
- Egg White- 1
- Cornflour- 5 tbsp
- Oil- 1 tbsp
Mongolian Stir Fry Sauce:
- Hoisin Sauce-2 tbsp
- Dark Soy Sauce- 1 tsp
- White Vinegar-1 tsp
- Cayenne Pepper- 1 tsp
- Brown Sugar- 1.5 tbsp
- Salt-pinch
Other Ingredients:
- Ginger julienned- 1 inch (2 tbsp)
- Garlic chopped - 10 cloves (2 tsp)
- Red Chilli flakes- 1 tsp
- Spring onion whites-10
- (Cut into long stems, white +little green- cut into halves vertically)
- Spring onion greens, cut in similar length-10
- Corn slurry- 1 tbsp cornflour mixed with 4 tbsp water.
- Sesame oil- 1.5 to 2 tbsp
- Oil for deep frying
- Oil-1.5 tbsp
Preparation:
- Cut broad flattish slices from chicken breasts.
- Now marinate the chicken pieces with the white pepper powder, salt and light soy sauce as mentioned in the ingredients. Set aside for 10 mins.
- Separate the egg white from the yellow and keep in a small bowl.
- Now add the ingredients for the batter/2nd marinade, mix and set aside for around 10 mins.
- Peel and julienne the ginger and also peel and chop the garlic cloves.
- Take around 10 spring onions.
- Cut the spring onion into 2 - the white part along with 1/2 an inch green portion and the balance green.
- For the white portion, again cut these into halves vertically.
- Cut the green part in similar length.
- Keep these separately on a plate.
- Also prepare the Mongolian Stir Fry Sauce. For that, take a small bowl and add all the ingredients for the sauce. Give a mix and set aside. Give a mix once more before adding during stir frying. The brown sugar tends to settle in the bottom.
- For the Corn Slurry, add 1 tbsp of Corn flour/starch in a small bowl and add 3-4 tbsp water. Whisk it and set aside.
- Remember to whisk it again just before adding to the wok, tends to stick to the bottom.
Process:
- To deep fry the battered chicken pieces, heat oil in a pan and drop the chicken pieces. Do not stir for around 30 secs.
- Fry on medium heat for around 5-6 mins till light brown in colour . Do not crowd the pan. Remove onto a plate .
- Repeat for the balance chicken pieces in the next batch.
- Now heat a wok and add 1.5 tbsp oil.
- Now add the julienned ginger and chopped garlic.
- Give a stir and then add the red chilli flakes
- Mix and fry on high heat for around 1 min and then add the spring onion whites. Give a mix and fry on high heat for another minute.
- Now add the Mongolian sauce, 3-4 tbsp water and mix and cook it on medium heat for 1 min.
- Now add the fried chicken pieces, give a mix and stir fry for 1 min till the chicken pieces get coated with the sauce.
- Add most of the spring onion greens, mix and stir fry for 30 secs.
- Add the corn slurry and little water if required and stir fry till everything is combined (around 1 min)
- Lastly add the sesame oil, mix and stir fry.
- Garnish with the balance spring onion greens, mix and serve hot.

Ingredients:
3 tbsp peanuts
1 tbsp white sesame seeds
3 pieces garlic
2 sticks green onions
250g udon noodles
1 tbsp chili oil (
1 tsp sweet paprika
1 tsp toasted sesame oil
1 tbsp soy sauce
1 tsp dark soy sauce
1 tsp rice vinegar
1 tbsp maple syrup
2 tbsp peanut butter
2 tbsp water
Directions:
1. Bring a pot of water to boil for the noodles
2. Heat a frying pan to medium heat. Add the peanuts and white sesame seeds. Toast for 1min. Transfer to a pestle and mortar. Then, coarsely crush and set aside
3. Grate the garlic and chop the green onions
4. Boil the udon noodles for half the time to package instructions (in this case 3min)
5. Heat up the frying pan to medium low heat. Add the chili oil followed by the garlic. Cook for about 45 seconds. Then, add the sweet paprika, toasted sesame oil, soy sauce, dark soy sauce, rice vinegar, maple syrup, peanut butter, and 2 tbsp water. Give the pan a good stir
6. Strain out the noodles and add to the peanut sauce. Add the green onions, turn the heat to medium, and cook the noodles for a couple of minutes while stirring
7. Plate the noodles and sprinkle over the crushed peanuts and white sesame seeds

-2 tablespoons (30g) soy sauce

-3 tablespoons (53g) Chinese black vinegar
-1/4 (44g) cup chicken stock
-3 tablespoons (36g) water
-2.5 tablespoons Shaoxing wine (31g)
Stir Fry:
-2lbs Chicken thighs, Boneless skinless
-1 teaspoon (4g) corn starch
-pinch of white pepper
-2 tablespoons (36g) soy sauce
-1 tablespoon (10g) Shaoxing wine
-3.5 tablespoons (53g) vegetable oil
-1/4 cup raw peanuts (48g)
-8 dried chilies, more specifically dried Tianjin or chili de arbol
-3/4 bunch green onions cut into 3/4 inch segments
-1-inch knob ginger, minced
-8 cloves garlic, minced and divided
-3/4 teaspoon, ground Sichuan peppercorn (1g) *optional*
additional sliced green onion for garnishing
