Crispy, Sweet & Zesty: This is my Crispy Orange Beef and its ready in 25 minutes!

Ingredients:
Crispy Orange Beef
3 tbsp oil
500 g (1.1 lb) beef steak I use sirloin, chopped into strips*
2 tbsp cornflour (cornstarch in the US)
1 pinch of salt and pepper
Juice of 2 large oranges (approx. 120ml or ½ cup or orange juice)
Zest of half an orange
3 tbsp caster sugar
5 tbsp soy sauce
2 cloves of garlic peeled and crushed
1 tsp ginger paste
1 tsp rice vinegar
1 red pepper sliced
1 large onion peeled and sliced
To Serve:
Boiled rice
4 spring onions (scallions) chopped on the diagonal
Optional - to thicken the sauce:
1 tbsp cornflour mixed with 3 tbsp cold water to form a slurry (cornstarch in the US)
Instructions:
1. Pat the beef dry with some kitchen roll, then mix the cornflour (cornstarch) with the salt and pepper and toss the beef in the cornflour until completely coated.
2. Heat the oil in a wok or large frying over a high heat.
3. When the oil is hot, tip the beef in and fry until crispy. Try not to move the meat around too much as this reduces the amount of crispiness you get. It should take about 5-6 minutes to crisp up the beef, with about 3 or 4 stirs during that time.
4. Once the beef is crispy and cooked through, remove the beef using a slotted spoon, and place in a bowl lined with kitchen roll to soak up excess fat.
5. While the beef is cooking, mix the orange juice, zest, sugar, soy sauce, garlic, ginger and rice vinegar and put to one side.
6. After the beef has been removed from the pan there should still be a little oil left. Turn the heat down to medium and add the sliced red pepper and onion.
7. Fry for a 2-3 minutes (so they're hot but still crunchy), then pour over the orange sauce.
8. Turn up the heat and bring to the boil, then add the beef back in. Give it a stir and heat through for 1 minute. If your sauce is looking too thin, you can stir in a little cornflour slurry to thicken.
9. Once bubbling and thick, serve up with boiled rice. Garnish with the spring onions (scallions).

Notes
*It's easier to cut the steak into thin strips if you place it in the freezer for 10 minutes to firm up a little.
CAN I MAKE IT GLUTEN FREE?
Yes! Replace the soy sauce with tamari. I've done this lots of times and it works really well. You must ensure you use the correct amount of orange juice and sugar though, otherwise the tamari can overpower the flavours.
CAN I FREEZE IT OR MAKE IT AHEAD?
This recipe works best when made and served right away. Freezing/chilling then reheating means the beef won't be crispy.However, it does still taste really good. So if you did want to freeze it, then cool, cover and freeze. Defrost overnight in the refrigerator and reheat thoroughly in the wok or a microwave until piping hot throughout. You can add a splash of water if it's a little dry.

Ingredients:
For Beef:
1 lb flank steak, cut into 1-inch strips
1 egg white
1 tbsp cornstarch
¼ cup vegetable oil
¾ oz spring onions, (up to 1 oz), cut into 1-inch long pieces, green and white parts divided
salt and ground black pepper, to taste
For Sauce:
1 tbsp vegetable oil
1 ginger, (2 inch piece), peeled, minced
2 finger chile peppers, of your choice, seeded, minced
orange, (from 1 orange)
orange zest, (from 1 orange)
3 garlic cloves, minced
¼ cup rice vinegar
¼ cup soy sauce
¼ cup brown sugar
1 tbsp fish sauce
To Serve:
1 cup rice, steamed, per serving
¼ tsp spring onions, chopped, per serving

0:09 Make the sauce first. Heat up oil in a saucepot over medium heat then add the ginger, garlic, and chile peppers. Saute until translucent.
0:33 Add the rest of your sauce ingredients and stir to combine. Bring sauce to a boil, then reduce to a simmer. Continue simmering for roughly 10 minutes, until the sauce reduces by half. Set aside.
1:11 Prepare the batter for the meat first. Combine egg white and cornstarch in a mixing bowl. Season with salt and pepper, then beat until evenly incorporated.
1:38 Add the beef & coat in the batter. Set aside.
1:55 Heat up oil in a wide skillet over medium-high heat. Add the coated beef, and saute for no more than 5 minutes, until they turn golden and crisp. Drain off excess fat.
2:25 Once the beef turns crisp and golden, reduce heat to medium-low and add the white parts of the spring onions. Saute briefly.
2:35 Pour the sauce into the beef and green parts of the spring onions. Stir to combine. Simmer briefly for 3 to 5 minutes.
3:04 Transfer your beef to a serving container and sprinkle chopped spring onions as garnish. Serve with rice, and enjoy!

Chinese Orange Beef Stir-Fry (Chinese Style Recipe)
Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
500g Beef Fillet
2 Oranges
2 Spring Onions
1 Tsp Chinese 5 Spice
2½g Ginger
1 Star Anise
3-5 Dried Red Chillies
1 Clove Garlic
1 Tbsp Dark Soy Sauce
1 Tbsp White Sugar
1½ Tbsp Brown Sugar
5 Tbsp Cornflour
2 Tsp Olive Oil
Salt To Taste
Method:
1. Finely chop the garlic and ginger
2. Roughly chop spring onions
3. Peel the oranges, remove the white flesh from the inside of the peel using a knife
4. Cut the orange peels into thin strips
5. Squeeze the orange juice into a bowl, add the white sugar and 2 Tbsp of hot water, mix well
6. Slice the beef thinly and place into a large mixing bowl
7. Add the olive oil and 4½ Tbsp of the cornflour, mix well for even coating
8. Place the remaining cornflour and 50ml of cold water in a small bowl, mix well
9. Heat 1 Tbsp of oil in the wok over medium heat
10. Place the orange peel in the wok, fry for a minute
11. Add the orange juice mixture, bring to the boil, then remove from wok into a bowl
12. Heat 1 Tbsp oil in the wok over high heat
13. Place beef in the wok, stir-fry until it changes colour, remove from wok
14. Heat another 2 Tbsp of oil over low heat
15. Place the star anise, chillies, ginger and garlic in the wok, fry for a minute
16. Turn heat to high, add the orange juice and peel from above, stir well
17. Add the beef, soy sauce and brown sugar and then stir
18. Pour in the cornflour mixture, spring onion, pinch of salt, stir fry for a minute
19. Transfer onto a dish and serve
