Ep. 368: Southern Apple Pie | Old Fashioned Recipe ????
Hello my Friends!
Hope all of you are doing well, staying Safe and Healthy!!
I did this Recipe on YouTube 3 years but I decided to changed it and give it a Update.
Today I am making a Old Fashioned Recipe that is near and dear to my Heart and my Momma and Grandmother use to make for me during my Childhood, Apple Pie!!!
This Classic Pie is so delicious and full of Tender Apples and Spices!! This brings back memories of being in my Grandmother’s Kitchen, Comfort Food as it’s best! This will be your go to Apple Pie Recipe; Don’t forget the Vanilla Ice Cream!
Ellen’s Buttery Pie Crust Recipe:
Ellen’s Pies Recipes Playlist:
8 medium apples, washed, peeled, cored, and sliced (1/4-1/2 inch thick)
1 cup white sugar
1/4 cup packed light brown sugar
2 tbsp cornstarch
1 tbsp ground cinnamon
1 tsp ground nutmeg
1/8 tsp (Pinch) ground allspice
1/8 tsp (Pinch) salt
1 tbsp freshly squeezed lemon juice
2 tbsp unsalted butter, cut into chunks
2 pie crusts for 9-inch pie, Homemade, Refrigerated, or Frozen (Deep Dish)
Egg Wash:
1 medium or large egg, lightly beaten
1 tbsp water or milk
Butter Chunks, for top of the crust, optional
White Sugar, for dusting on top
Baker’s Note: If using Homemade or Refrigerated Pie Crust, grease the pie dish with butter. If it burns to quickly, add aluminum foil around the edges.
Preheat Oven to 400 Degrees
Place 1 pie dough onto a floured surface and roll disk out into a 8 to 10 inch circle. Press the dough evenly into the bottom and sides of the pie dish and set aside.
In a large bowl, add sliced apples, white and brown sugar, cornstarch, lemon juice, cinnamon, nutmeg, allspice, and salt; stir until well combined (it will create a glaze). Pour the apple filling into the pie crust and add the 2 tbsp butter right on top of the apples and set aside.
Roll the other pie crust on a floured surface about 1/4-1/2 inch thick.
For the Lattice Strips: Using a knife or pizza cutter, cut it onto 1/4-1/2 inch wide. Lay out 3-4 strips on top of the pie then go the opposite way and add 3-4 strips. Trim the edges of the strips then crimp to secure.
For the Whole Crust: Roll the crust then place it on top of the pie. Seal the edges of pie crust then cut into 4 small slits in the middle.
Brush the pie on top with the egg wash, then add butter chunks (if using) and sprinkling of sugar. Bake for 50 minutes until golden brown. Remove from the oven and cool slightly or completely on a wire rack. Serve with vanilla ice cream and enjoy!

Best Apple Pie Filling Ever!
Apple Pie Filling
You can use to swirl into cakes, as cake topping, apple crisp, as an ice cream topping and of course for pies! You will need to double the recipe for a deep dish pie
3 1/2 cups sliced or chopped apples tossed with about 1 1/2 Tablespoons lemon juice (This time I needed my apples chopped for the recipe I will use them in) Any baking apple is fine. I like to mix mine. I used Honeycrisps and Jonagold this time.
1/2 cup water
3 Tablespoons sugar
3 Tablespoons brown sugar (light or dark) If you do not have brown sugar regular sugar is fine.
1-1 1/2 teaspoons ground cinnamon
dash of salt
2 Tablespoons butter
Slurry: 2 Tablespoons water, 2 Tablespoons cornstarch
Directions: Slice or chop apples as you will need to use them (slices for pies, chopped for toppings, etc.) Toss with lemon juice. Set aside. Melt butter in pan. Whisk together the 2 Tablespoons each of water and cornstarch. Set aside. Add to the butter, both sugars and water. Whisk well. Add cinnamon and dash of salt. Whisk well. Add the cornstarch slurry. Whisk well. Bring up to a boil. Add apples, stirring thoroughly. Bring apples back up to a boil. Continue to to keep apples moving and let them stay boiling for 30-40 secs. Turn temperature down to a simmer. Cover with lid or foil and continue as shown to let apples simmer 6-8 minutes approximately, until done to your likeness. If using for baking about 6 minutes. If using for a topping then go up to about 8 minutes. Remember to give them a good stir as to cook them evenly. Use as you would and type of pie filling. Makes about 2 1/2- 2 3/4 cups filling.Depending on the pie size you may need to double the recipe. The filling will keep in the refrigerator for about 3 days. If not using right away, just place cooled filling in a freezer bag. Hint: after filling the freezer bag remove as much air as possible and lay on a flat surface in the freezer. It is much easier to store it flat in your freezer. Freezes well for up to 9-10 months.
To make a pie using the filling: Preheat your oven to 425 degrees. Place a bottom crust. Pour cooled pie filling (room temperature is fine) into the pie. place a top crust (cut a few vent holes) or a lattice style crust on top. Crimp the edges of the pie dough. Brush the top crust with egg white. Bake for 38-45 minutes or until golden brown. You may want to use a pie shield or foil on the edges to avoid over browning as the pie bakes.
