How To make Saffron Pasta
HAND:
1 c Durum semolina
1/8 ts To 1/4 ground saffron or
Threads 1/3 c Water, as needed
EXtrUDER:
1 c Durum semolina
1/8 ts To 1/4 ground saffron or
Threads 1 tb Vegetable oil, optional
1/4 c Water, as needed
If using saffron threads, warm the water in the microwave for 1 minute and soak the threads in the water.

Dough recipe ingredients
1gr Saffron
40ml Hot Water
550gr Flour type 00
150gr Pasta Semolina
1Tsp Salt
4 Whole Eggs
3 Eggs Yolks
2 Tbsp Olive Oil

Welcome to your new favourite pasta recipe! I tried a Saffron Pasta in cooking school for the first time and I just knew I had to recreate the recipe for you all!
Here’s how you make this delicious pasta at home ☺️
Ingredients :
Carrots - 3 nos
Onion - 1/2 no
Garlic - 4 Cloves
Chilli Flakes - 1/2 Tsp
Saffron - a Pinch
Pasta of your Choice - 150g
Cream - 1 to 2 Tbsps
Salt & Pepper - to Taste
Parmesan Cheese - Garnish
Process :
* For the sauce - cut the carrots & onions roughly & place them on a baking tray lined with parchment paper
* Wrap the garlic cloves in a piece of aluminium foil along with some salt & oil & place it on the tray
* Drizzle some olive oil, salt & pepper on the veggies & roast them in a pre-heated 200C oven for 15-18 mins
* Once the roasted veggies are out of the oven, allow them to cool down, transfer them to a blender & blend into a smooth purée
* Meanwhile, boil the pasta in salted boiling water until al dente, strain them, wash them under running water & drizzle with some olive oil - reserve the pasta water for later
* Heat up some olive oil in a saucepan, add in the chilli flakes, roasted carrot purée along with some reserved pasta water - cook it on medium low heat for 3-5 minutes
* Add the saffron to a small mortar pestle & crush it until it forms a fine powder - add in a spoonful of reserved pasta water & pour this mix into the sauce - give it a good mix
* Season with salt & pepper to taste along with the boiled pasta - give it all a mix
* Finish with some cream & adjust the consistency of the pasta using some reserved pasta water
* Serve hot, Garnish with some parmesan cheese & Enjoy ????????

Fregula (or fregola in Italian) is a pasta special to Sardinia. This peppercorn shaped pasta has been made by hand since medieval times; saffron has been grown on the island for even longer - it is thought the Phoenicians introduced it over 2000 years ago. And in this week's episode, organic saffron producer Cumpanzos organised a cooking demonstration for us using both these ingredients.

In this week's episode of #FarhangFlavor we visit self-taught chef Fiona Afshar from Instagram's very popular page @CookingWithFiona, to learn about her original saffron Boloroni homemade pasta. According to Chef Fiona, Boloroni is her upgraded version of the more traditional Persian macaroni married with the Italian bolognese sauce pasta, which features everyone's favorite crunchy tahdig bottom of course. Chef Fiona describes herself as a self-taught home chef, very passionate about creating visually appealing, beautiful, and delicious food. Her latest passion has been pasta making, according to her I love creating healthier, and tastier pasta with grilled vegetables, herbs and superfoods. There is nothing more gratifying than making your own pasta, and I love to inspire home cooking to the younger generation in a fun, visually appealing way.
Food is such a big part of our day-to-day lives, it's a conversation changer when presented on the dinner table, it brings family and friends together, and I am so humbled to be able to share some of my passion and knowledge through social media. It's truly humbling and fun!

Bolognese Sauce:
1 onion
1 carrot
1 stick celery
4 garlic cloves
1 cup of mushrooms
1 tbsp fresh oregano or 1 tsp dried oregano
Salt
Pepper flakes
1 lbs of 15% ground meat
1 jar of tomato sauce
3/4 cup red wine
1/4 tsp saffron powder
1/3 cup half and half
Pasta
2 cups 00 flour (aka doppio zero flour)
4 eggs
Salt
1tbsp olive oil
1/4 tsp saffron
Make sure you have a nonstick pan so you can get that crunchy bottom.
1/4 cup water, 3 tbsp olive oil and 1/4 tsp saffron for the bottom of the pan.
