How To make Mussels with Saffron and Tomatoes Over Pasta
2 tb Olive oil
3 md Garlic cloves, chopped fine
1/2 c Rich, salt-free fish stock
1 lg Pinch of saffron threads
32 sm Fresh mussels in the shell,
-rinsed clean & debearded 1 cn Salt-free whole tomatoes
-(16-ounce) 1 tb Double-concentrate tomato
-paste 1 tb Sugar
1 Bay leaf
2 tb Fresh chives, finely chopped
Cooked spaghetti or linguine In a large saucepan, heat the olive oil with the garlic over moderate heat. Add the stock and the saffron and bring to a boil. Add the mussels, cover the pan, and steam until all the mussels have opened, 3 to 3 minutes; discard any unopened mussels. With a slotted spoon, remove the mussels from the pan and keep them warm in a covered bowl. Add the tomatoes to the pan, breaking them up with your hands, and stir in the remaining ingredients, except for the chives. Simmer briskly until the sauce is thick but fairly liquid, 5 to 7 minutes. then return the mussels to the pan and simmer to warm them through, about 1 minute more. Spoon the sauce, shells and all, over cooked pasta. Garnish with chives.

Spaghetti with White Wine and Tomatoes (called Spaghetti alle Cozze e Pomodorini in Italian) is a traditional Italian seafood pasta recipe, popular in Italy during the Christmas holidays or anytime the seafood is fresh!
Here, we'll show you how to cook mussels to perfection! Then, we'll combine those succulent mussels with grape tomatoes to create a spaghetti to die for.
TIP: Don't know how to clean mussels? Give them a rinse, then use a paring knife to scrape off any loose dirt, sand or barnacles. Mussels don't have much sand in the shell itself, so we don't need to pre-soak them as we might clams. DO strain the mussel broth that this recipe produces before using it in the pasta sauce.
TIP: Seafood broth is naturally very salty. Salt the pasta water less than you normally would or not at all. Add salt to taste if needed.
INGREDIENTS (SERVES 4)
Mussels (rinsed and de-bearded): 3 lbs (1.5 kg)
Spaghetti: 11 oz (320 g) - pasta for 4
Grape Tomatoes: 14 oz (400 g)
Garlic - 3 cloves (2 minced, 1 whole)
Parsley: 2 handfuls (1 minced, 1 chopped)
Fresh Red Chili Pepper: 1/2 or to taste
White Wine: 1/4 cup (60 ml) - here, Vermentino!
Olive Oil: as needed to cover the pan (7+ tablespoons in total)
Salt and Pepper: to taste

Mussels with Saffron and Fennel
You can serve this fun yet elegant dish in individual portions, piling the mussels high on each plate with a ladle. Make sure you distribute the sauce evenly and have plenty of grilled bread on the table, as well as some bowls to collect the shells. Even without the saffron, this is a delicious dish, but the saffron adds a luxuriousness that I love. This recipe is easily scaled up; plan on a pound of mussels per person for a first course, 1½ to 2 pounds for an entrée.

Ingredients:
2 # Prince Edward Island mussels
1 Cherry pepper minced
1 Medium onion sliced
4. Oz. Chopped garlic
1 Bunch scallions chopped
1 Red tomato diced
1 Yellow tomato diced
2. Oz. White wine
4 Oz. Vegetable, chicken, or fish stock
Pinch saffron
1 Oz. chopped oregano
1 Oz. Olive oil
1 Tbsp butter
Preparation:
1. Clean the mussels thoroughly.
2. Over med-high heat, heat a good sized sauce pot for 30-45 seconds and add the olive oil.
3. Add the onions and cook for 2 minutes.
4. Add the garlic and cook for 2 more minutes.
5. Add the tomatoes and scallions. Mix well.
6. Add the white wine and reduce by 1/2.
7. Add the stock, saffron, and oregano and bring to a boil.
8. Add all the mussels and cover to steam.
9. After 2 minutes uncover and toss the mussels. Re-cover and cook for 3 more minutes.
10. The mussels are done when they have all opened.
11. Stir in the butter to make the sauce a little creamy.
12. Plate and serve.
13. * If the sauce is a little watery reduce for 1 more minute.
