WHAT YOU'LL NEED:
* 2kgGoat meat or beef(Goat meat works best)
* 1 kg beef( flanken style ribs)
* 2 cups water
* ½ kg shaki and kpomo
* 2 knorr beef cube to season beef
* 1 teaspoon salt
* Small Handful of chopped onion
* Smoked fish
* 3 cups Egusi
* ¼ cup water
* ½ cup palm oil
* Handful of chopped onion
* 2 tablespoons iru
* 2 tablespoons crayfish
* 2 medium bell Peppers
* 4-5 scotch bonnet pepper
* Handful chopped uziza
* Handful chopped green leaves
Pounded yam
* 500g African yam
* 3 cups of water

Charro Beans Recipe | How To Make Mexican Bean Soup
Today I am making a delicious pot of charro beans. This Mexican style bean soup is hearty and can be a meal or a side to your next BBQ. Enjoy!

INGREDIENTS
1 lb (454 g ) dried pinto beans
5 quarts (4.73 L) of water for boiling
12 oz (340 g) smoked bacon
12 oz (340 g) hot dog franks or sausage of your choice
3 (260 g) Roma tomatoes
1 (265 g) large onion
5 to 7 cloves garlic
1 Knorr tomato chicken flavored bouillon cube
salt to taste
- PRE-SOAK beans overnight for best results
- Drain beans from soaking water and rinse
- Place beans in a pot filled with 5 quarts of water
- Bring to a boil, then continue to gently boil for one hour
- Chop bacon and cook
- Once bacon is cooked remove most of the rendered fat
- In the same pan add chopped onions, tomatoes, jalapeno, garlic and bouillon cube
- Sauté for 5 minutes
- After beans have cooked for one hour, add sautéed ingredients to pot
- Also add chopped fresh cilantro
- Continue to boil for an additional 30 to 45 minutes or until beans are tender and cooked through
- Add salt to taste then serve
- This recipe easily serves 8 to 10 side servings

Red Red, Ghanaian Bean Stew (Vegan, Vegetarian, Gluten Free, West African Recipes)
Red red is a Ghanaian bean stew served together with fried plantains and often garnished with gari, a coarse toasted cassava flour. It makes an altogether delightful dish, that is perfectly suitable for vegans and vegetarians alike. If you would like to try something new, have a go at this.
Recipe:
Bean stew/Serves 4
1 cup of dry black eyed peas (180-200g or 1 canned beans)
1/4 cup red palm oil
1 large onion
1 tablespoon tomato paste
4 medium size, ripe tomatoes
1 inch fresh ginger
2 cloves garlic
2 scotch bonnet peppers
500ml vegetable stock
salt to taste
water for soaking beans, extra as needed.
Method:
1. Soak the beans in fresh water for about 2 hours or overnight, this makes the cooking process quicker. You can also soak the beans in hot water for half an hour before cooking. Cook the beans for 30 to 45 minutes until soft.
2. Chop the vegetables. Saute the onions until caramelized then add the tomato paste.
3. Add the tomatoes in and fry until they have cooked down. This should take 5 to 10 minutes.
4. Add the vegetable stock and allow to simmer for half an hour on low heat. During this time you can prepare the plantains.
Take 4 plantains.
Peel, slice, season with salt and deep fry or oven roast.
Serve the dish garnished with a little gari powder.
Where you can get these ingredients. These are now widely available in the UK online or at Afro Caribbean grocers. In London you will be able to find these in most supermarkets South of the river, in areas like North End Road market and markets around Peckham and East Croydon.
