How To make Quick & Easy Cheese Or Chicken Enchiladas

enchilada sauce, large can
1
each
tortillas, package, corn or flour, small
1
each
chicken, breast, cut in small pieces
1
jack cheese, grated
1
cheddar cheese, grated
Directions:
Spray a 9x13 inch baking dish with no-stick spray. Place small amount of sauce in pan. Heat corn tortillas in microwave to soften. Fill tortillas with chicken, cheese or both. Fold over and place in pan, seam side down. Cover with remaining sauce and sprinkle with cheese(s). Bake for 45 minutes at 350 degrees.

Creamy Chicken Enchilada Ingredients
0:11 1 lb or 500g chicken (cooked and shredded)
0:20 2 cups or 226g shredded cheddar and Monterey jack cheese
0:35 Dash of chipotle chili powder
0:40 Dash of cumin
0:46 1 8oz can diced tomatoes and chilis
1:23 8 flour tortillas
1:53 3 tbsp or 42g butter
2:03 3 tbsp or 24g flour
2:17 1.75 cups or 438ml chicken stock
2:43 1 8oz pack or 226g of cream cheese
3:11 Salt and pepper to taste
Cook in the oven at 350˚F or 176˚C for 30 minutes or until it is golden brown and bubbly on the sides.
Makes 8 (8 inch) enchiladas

Chicken Enchiladas Recipe | Enchiladas Made Easy - This is a easy to make and follow Chicken Enchilada video with several layers of delicious flavor. This Chicken Enchilada recipe is totally customizable with anything you want!
Chicken Enchiladas Ingredients
1 tsp Garlic Powder
1 10 oz. can Diced Tomatoes
1 15 oz. can Black Beans
1 small can of Black Olives
1 Medium Onion , Diced
12 - 24 Corn Tortillas
2 cups grated Cheddar Cheese
2 cups grated Monterey Jack cheese (I used a 4 blend Mexican Style Cheese)
Homemade Red Enchilada Sauce
2 Tbsp vegetable oil
2 Tbsp Flour
4 Tbsp Chili Powder
1/2 Tsp Garlic Powder
1/2 Tsp Salt
1/2 Tsp Cumin
1/4 Tsp Onion Powder
1/4 Tsp Cayenne Pepper
2 cups Chicken Broth
Pre-heat oven to 400 degrees!

INGREDIENTS
1 lb cooked chicken
1/4 tsp chili powder
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp tsp ground cumin
1/4 tsp seasoning salt
pepper to taste
14 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz cheddar cheese (or cheese of choice)
ENCHILADA RED SAUCE INGREDIENTS
1/4 cup cooking oil
4 Tbsp all purpose flour
2 Tbls chili powder
1/4 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
16 fl oz chicken broth
salt to taste
**Bake in a 9x13 baking dish
**Preheat oven to 375 degrees F
**Bake covered for 20 minutes and then uncovered for 10 to 15 minutes.

▪️ 14.5 oz can chicken broth (low sodium, preferred)
▪️ 2 tbsp unsalted butter
▪️ 2 tbsp flour
▪️ 1/2 tsp salt
▪️ 1/4 tsp cumin
▪️ 3/4 cup room temperature sour cream (or plain non-fat Greek yogurt)
▪️ 4 oz can diced green chiles (mild or hot, depending on preference)
▪️ 1 cup shredded Monterey Jack cheese
