How To make Texas Cheese Enchiladas
12 Corn tortillas
2 x Hortening (lard best)
4 tb Cooking oil
2 x Lour
2 Yellow onions, large, choppe
2 x Hile powder or ground
4 c Grated cheese---either Longh
Allow 3 enchiladas per person. Use a Pyrex utility pan (13-1/2" x 8-3/4") to cook them. Lightly grease the utility pan (for authenticity use lard). Preheat the oven to 400. Chop onions and grate cheese. Saute the onions lightly in 2 T. oil. Melt lard in a skillet; stir in the flour and make a light roux. Add ground chiles or chile powder, water and salt, and cook until thick. Of commercial chile powders, Gebhardt's from San Antonio is best, but not as good as ground *chiles pasillas*. Heat the remaining oil in a skillet. Using kitchen tongs, dip each tortilla in hot oil until well softened (about 15 seconds). Hold tortilla up and allow oil to drip back into the skillet. Using the tongs, dip tortillas in chili gravy. Place the tortilla in the Pyrex pan, put a good-sized pinch of cheese and onions in the middle, and roll the tortilla, placing the flap side down. Continue filling and rolling tortillas until the pan is full. Pour more chili gravy on top of the enchiladas, sprinkle the top generously with more grated cheese, and pop into preheated oven. Cook only until the cheese begins to bubble (about 10 minutes). Serve immediately.

2 Tbsp (15 ml ) cooking oil
2 Tbsp (20 g) all-purpose flour
1 to 1 1/2 tsp light chili powder
1 1/4 tsp chicken bouillon powder
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp ground cumin
1 cup (236.5 ml) water
8 x 12-inch baking dish

Whit corn tortillas
Oil for frying
Medium cheddar cheese
For the beef chili gravy sauce
1/2 onion;small diced
2 minced garlic cloves
1 lb ground beef (80/20)
2 tsp ground cumin
2 tsp oregano
2 tsp black pepper
Salt to taste I used 1 1/2 tsp
3 1/2 unsalted beef broth
2 tbsp tomato paste
3 tbsp New Mexico chili powder
1 1/2 tsp paprika
1 1/2 tsp cayanne pepper
4 tbsp APF (all purpose flour)

How I make Tex-Mex Beef Enchilada Sauce Recipe
This is my go to recipe for Tex-Mex Beef Enchilada Sauce. I can easily make a double batch and store some in the freezer for future use. Always try to be ahead of the cooking game. Tex-Mex Enchilada Sauce
1 pound of ground beef
¼ finely diced onion
3 minced garlics
1 can tomato sauce
4 tablespoons all-purpose flour
1 teaspoon of ground comino
¼ of a teaspoon of oregano
3 tablespoons of chili powder
4 cups of beef broth
1 teaspoon of salt
½ teaspoon of pepper
Corn tortillas
Diced onion
Shredded cheddar cheese
Oven 375°F
Casserole dish
In a skillet, fry the ground beef until well done. All the onion and garlic let it cook until onions are translucent.
Add the spices, comino, oregano, chili powder, salt and pepper. Cook 1 minute.
Add the flour, cook for about 2 minutes to cook off the flour taste.
Add the tomato sauce and the broth/liquid slowly while whisking. Adjust the salt and pepper to your liking. Cook for 15 minutes. Ready to roll the enchiladas.
