⭐️ Ingredients
2 ounces (350 grams) rigatoni pasta
ROASTED EGGPLANT
2 medium eggplants
1 tablespoon extra virgin olive oil
⅓ teaspoon salt
¼ teaspoon black pepper
TOMATO SAUCE
2 tablespoons extra virgin olive oil
1 medium onion
2 cloves garlic
½ teaspoon red pepper flakes
1 can (28 oz or 800 g) whole peeled tomatoes
1 cup (250 grams) water
1 teaspoon salt
¼ teaspoon black pepper
1 teaspoon dried oregano
10 leaves fresh basil
1 handful ricotta salata grated. Sub parmesan, pecorino, feta, or vegan cheese.

In this video, we show you how to make delicious Spaghetti with eggplant (also known as aubergine or brinjal) and tomato sauce. This is the perfect recipe for vegans, vegetarians, and also those who want to consume more veggies into their diet. It is particularly great for children (and some adults) who will not even realize they're eating eggplant and is secretly hidden in the pasta sauce! The eggplant and tomato sauce is rich, thick and packed full of flavour. It can be used as a base for any type of pasta, but today we chose to serve it with silky spaghetti.
To make the eggplant pasta sauce recipe, you will need:
2 small or 1 large eggplant (aubergine)
3 tbs olive oil
4 large garlic cloves
1/2 medium-sized onion
1 green pepper (you can use capsicum bell pepper or another green pepper that you have available)
2 large tomatoes
1 tbs tomato puree
1 tsp salt (or to taste)
1/2 tsp black pepper
1 tsp paprika
1 tsp red pepper flakes
1 tsp dried basil
1 tsp dried thyme
1 tsp garlic granules
1-2 cups hot water
pasta water (water from boiling the spaghetti or pasta)
finely chopped parsley
cooked spaghetti (or any other type of pasta)
optional: garnish with parsley and grated cheese of your choice (including vegan cheese)
The aubergine and tomato sauce is incredibly rich and flavourful. It can be used as a base for lasagne, pasta bakes or even used as a dip. You can even add mince meat to this pasta sauce and no one will ever know that it contains the added goodness from eggplants!
This eggplant pasta is inspired by the Sicillan pasta alla norma which is a famous Italian pasta dish. It is a fabulous easy dinner dish that will surely be loved by all the family.
