1 lb Linguine or thin spaghetti 2 tb Butter 1 lg Sweet onion; chopped 1 1/2 c Green tomato puree* 1 c Whipping cream Salt; to taste 1 tb Whole black peppercorns 6 tb Chopped sundried tomatoes -- (to 8 tb.) 3 To 4 tb. chopped parsley *See Green Tomato Puree recipe. Prepare linguine or spaghetti according to package directions. Melt butter in a heavy saucepan. Add onion; saute until transparent. Add green tomato puree and whipping cream. Salt to taste. Simmer until sauce is thickened. While sauce is cooking, coarsely crush peppercorns in a mortar with a pestle. Drain linguine or spaghetti. Toss with sauce. Tortellini Sauce with Creamy Tomato and Spinach | Creamy Tomato Pasta Recipe!
Make this easy creamy tomato pasta sauce for your stuffed pasta like tortelloni or tortellini in a matter of minutes. Minimal ingredients well put together can create loads of flavour!
This tortellini sauce is a combination of cream and tomatoes with a touch of aged cheese. Hard Italian cheese like Parmesan (Parmigiano Reggiano), Grana Padano, Pecorino Romano or Asiago could be added.
Instead of using straight up tomatoes I went with sun-dried tomato pesto. So much flavour was already built into that condiment, so why not use it for a quick sauce with a killer taste! It’s a little kitchen hack I like using when I need flavours fast!
Finally, I’ve thrown a handful of fresh spinach for a vibrant and healthy touch of green. You can use any vegetables you love. Asparagus, kale or tenderstem broccoli (broccolini) all sound like a great choice to me. You will want to parboil the asparagus and broccoli before adding to the sauce. It all goes well in this tortellini recipe!

Green Tomato Pasta: Ingredients: Green Tomato Tuna salt pepper powder garlic powder cheese sesame oil Italian seasoning parsley lemon juice butter
You need: 1 tbsp olive oil 1 big diced onion 1 minced garlic clove 1 cup cut up zucchini 2 cups tomato passata salt and pepper to taste 1 tbsp italian herb mix (oregano, thyme, rosemary) 1 tsp Super green Mix
