Pasta in creamy marinara sauce (creamy tomato pasta)
Yummy vegetarian pasta recipe with tomatoes and sour cream. It's so tasty you would make this again and again.

Ingredients:
½ pound (225 gms) of Penne Pasta (boiled as per instructions) or any pasta of choice
1 can of diced or pureed tomatoes or 3-4 large tomatoes (pureed)
1 small head of broccoli (cut into florets) or any vegetable of choice
250 gm of baby bella mushrooms (sliced) or white button mushrooms
1 tablespoon garlic (finely chopped)
½ cup onions (finely chopped)
10-12 basil leaves (torn) or 1 tsp dried basil
2 tablespoon fresh oregano leaves or 1 tsp dried oregano
2 tablespoon parmesan cheese (or as per taste)
½ cup mozzarella cheese (or as per taste)
2 teaspoon italian seasoning
3 tablespoon sour cream
1 tablespoon sugar
Salt and pepper to taste
Red chilli flakes to taste
1 tablespoon of butter
4 tablespoon of olive oil
Method:
For the marinara sauce:
In a pan, melt 1 tbsp of butter and add 2 tbsp of olive oil. Then add the onions and garlic and sweat for 2 minutes.
Add the tomatoes and just a little water swirling whatever is left in the can.
Simmer the sauce for 2 minutes and then add the sugar and salt. Stir and after a few minutes add the italian seasoning and chilli flakes.
I let the sauce simmer for 10 minutes but if you like your pasta with a lot of sauce just cook for a lesser time.
In the end add the basil leaves and fresh oregano. Keep aside once done.
In another pan, add 2 tbsp of olive oil and once hot add the broccoli and saute on high flame for 2 minutes. Season with some salt and chilli flakes.
Then add the mushrooms, season them as well and cook for a few minutes until they develop some color. Once done, keep them aside.
Heat up the marinara sauce and on low flame add 3 tbsp of sour cream. Give it a minute and then add the sauted broccoli and mushrooms. Also add the pasta and stir everything well.
Lastly, add mozzarella and parmesan cheese, finish with some more fresh basil and oregano. Serve hot. Enjoy!

Method:
To make Tomato puree
1. Blanch tomatoes, peel the skin, blend it to a puree.
2. To cook the pasta, boil water and add the pasta shells.
To cook pasta
3. Cook it until it is 3/4th done. Strain and keep it aside.
To make white sauce
4. To a wide pan, add butter and maida.
5. Cook the maida until it changes color.
6. Now add boiled milk and whisk it.
7. Season it with salt and pepper. Cook until it thickens.
8. Now add chesse slices and cook until the cheese melts.
To make the Pasta.
9. To a wide pan, add add and olive oil
10. To this add, garlic, onion, green capsicum, red capsicum, cooked corn kernels. Saute them.
11. Add the tomato puree.
12. Season the vegetables with salt, pepper, Italian seasoning, Oregano, tomato ketchup.
13. Cook for 2-3 mins.
14. Now add the white sauce and mix well.
15. Now add the cooked past, basil leaves.
16 Serve it with some grated cheese on top.

EASY Green Tomato and Herb Pasta Topping
Makes 2 to 4 Servings
2 Tbsp lemon juice
Salt to taste
1 to 1-1/2 Tbsp extra virgin olive oil
2 cups chopped green tomatoes
1/2 c diced onion
4 cloves garlic, minced
1-1/2 tsp dry basil leaves
Heat a skillet over medium heat. Add olive oil and allow it to heat up very briefly. Then add onion and garlic and allow them to sauté for about 1 minute. Add tomatoes and remaining ingredients. Stir; place cover on skillet. Allow to simmer 3 to 5 minutes, until tomatoes are at desired consistency. Serve immediately over cooked pasta. This topping would be excellent topped with grated Parmesan cheese.
Note: Since this topping takes so little time to cook, go ahead and start heating the water for the pasta as you prepare the ingredients for the topping. They should both be done about the same time. Enjoy! jk

Spaghetti with Tomato Cream Sauce
Serves 4-5

Ingredients:
-Tamatar (Tomatoes) 3-4 medium
-Boiling water as required
-Makhan (Butter) 1 tbs
-Lehsan (Garlic) chopped 1 tbs
-Chicken boneless cubes 250 gms
-Paprika powder ½ tsp
-Namak (Salt) 1/2 tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Makhan (Butter) 2 tbs
-Lehsan (Garlic) chopped 1 & ½ tbs
-Pyaz (Onion) chopped 1 medium
-Kali mirch (Black pepper) crushed 1 tsp
-Namak (Salt) 1/2 tsp or to taste
-Chicken stock cube 1
-Fresh parsley chopped 1 tbs
-Doodh (Milk) 1 Cup
-Cream 1/4 Cup
-Cheddar cheese grated 1/2 cup
-Spaghetti 250 gms (boiled as per pack’s instruction)
-Fresh parsley chopped
Directions:
-Cut tomatoes slightly with the help if the knife.
-In boiling water,add tomatoes and blanch for 3 minutes then remove skin.
-In blender jar,add blanched tomatoes and blend to make a puree & set aside.
-In wok,add butter and let it melt.
-Add garlic and mix well.
-Add chicken boneless cubes and mix well until changes color.
-Add paprika powder,salt,black pepper powder and mix well.
-Cover and cook on low flame for 12-15 minutes then cook on high flame until dries up & take out in a bowl.
-In the same wok,add butter and let it melt.
-Add garlic and mix well.
-Add onion,mix well and sauté until translucent.
-Now add tomato puree and mix well,cover and cook on low flame for 5 minutes.
-Add black pepper crushed,salt,chicken stock cube and mix well.
-Add fresh parsley and mix well.
-Add milk,cream and whisk well.
-Add half quantity of cooked chicken and mix well.
-Add cheddar cheese,mix well and cook for 2-3 minutes.
-Add boiled spaghetti and give it a good mix.
-Add fresh parsley.
-In serving dish,add creamy tomato spaghetti,cooked chicken,fresh parsley & serve!
