ITALIAN PASTA FAZOOL Neapolitan style pasta e fagioli with Cannellini beans (recipe in the box)
Pasta Fazool (called in Naples Pasta e Fasul) is a pillar of the Neapolitan cuisine. This recipe, created to feed the poorest part of the population, is incredibly rich in flavors and history: Its origin is ancient and comes from the Roman Empire, then modified during the centuries with new ingredients imported from Asia and Americas . In Naples, every family has its own recipe, with some changes, and the differences can cause some disputes!
INGREDIENTS:
12 oz. pre-cooked Cannellini beans (350 g)
7 oz. Pasta Mista (200 g)
1 clove garlic
1 white onion (200 g)
6 cherry tomatoes
1 carrot (75 g)
1 stalk celery (80 g)
8 tbsp extra-virgin olive oil
2 Qt (2 Lt) Beans or vegetable broth
1 bay leaf
1 tbsp fresh parsley, minced
to taste table salt
1 dash black pepper

Italian Grandma Makes Pasta e Fagioli - Beans 3 Ways
PASTA e FAGIOLI:
1.5 lbs Dried Cannellini Beans
2 cloves Garlic
3 Bay Leaves
1 Tbsp Salt
1 lb Small Shell Pasta
Sprinkle Grated Pecorino Romano Cheese on Top
*Vegetable Mix:
5 stalks Celery - chopped
2-3 large Carrots - chopped
1 large Onion - chopped
3 cloves Garlic - chopped
1/4 cup Olive Oil
1/4 cup Fresh Parsley - chopped
1 cup Peeled Plum Tomatoes
2 Tbsp Salt
6-8 cups Water
GINA's FATHER's FAVORITE DISH:
1-2 cups Cooked Cannellini Beans (prepped)
1 clove Garlic - chopped
1/4 tsp Oregano
2 tsp Extra Virgin Olive Oil
3 slices 2-day-old Italian Bread
1/8/ tsp Hot Pepper Flakes (optional)
BEANS with CABBAGE:
1 head Savoy Cabbage
2 Tbsp Olive Oil
3-4 cups Cooked Cannellini Beans (prepped)
3-4 cups *Vegetable Mix (above)
Sprinkle grated Pecorino Romano Cheese on top

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

2 tablespoons extra virgin olive oil
1 medium onion finely chopped
1 large carrot finely chopped
1 stalk celery finely chopped
2 cloves garlic grated
3 leaves sage chopped
1 sprig rosemary
2 bay leaves
3 tablespoons tomato paste
2 cans (15 ounces each) beans kidney, pinto, or borlotti beans (or 3 cups of cooked beans)
5 cups vegetable broth or more for a thinner soup
1 can (15 ounces) crushed tomatoes
1½ cups ditalini pasta or another short pasta
1 teaspoon salt or more to taste
2 twists black pepper + ¼ teaspoon red pepper flakes
