How To make Passover Apple Cake

9 Egg whites
9 Egg yolks
1/2 c Sugar
9 tb Atzo meal
9 tb Otato starch
1 Lemon; juiced and rind
Grated

apple mixture:

6 Apples grated
1/2 c Sugar
1 tb Lemon juice
1 1/2 ts Cinnamon
In bowl, beat until stiff, 9 egg whites, set aside. In a bowl, beat until thick and light, 9 egg yolks and 1/2 cup sugar. Stir in 9 tbls. matzo meal, 9 tbls. potato starch and the juice and rind of 1 lemon. Fold in 9 egg
whites. Pour 1/2 the batter into ungreased 9" x 13" baking pan. Bake at 325F for 25 minutes. Remove from oven and spread with apple mixture. In a
bowl combine 6 apples, grated; 1/2 cup sugar; 1 tbls. lemon juice and 1 1/2 ts. cinnamon. Spread remaining batter over apples. Bake 20 to 25 minutes longer, until brown.. -----
