How To make Onion Zucchini Quick Bread, Tried
1 lg Zucchini (1/2lb), shredded
2 1/2 c All-purpose flour
1/3 c Grated parmesan cheese
1 1/3 c French's French Fried Onions
-2.8 ounce can 1 T Baking powder
1 T Chopped fresh basil
OR 1 t Dried basil leaves
1/2 t Salt
3/4 c Milk
1/2 c Unsalted butter, melted
1/4 c Packed light brown sugar
2 lg Eggs
Preheat oven to 350 degree F. Grease 9x5x3-inch loaf pan Drain zucchini in colander. Combine flour, cheese, French Fried Onions, baking powder, basil and salt in a large bowl. Combine milk, butter, brown sugar and eggs in a medium bowl; whisk until well blended. Place zucchini in kitchen towel; squeeze out excess liquid. Stir zucchini into milk mixture. Stir milk mixture into flour mixture, stirring just until moistened. Do not over mix. (Batter will be very stiff and dry.) Pour batter into prepared pan. Run knife down center of batter. Bake 50-65 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack 10 minutes. Remove bread from pan to wire rack; cool completely. Cut into slices to serve. Note: 1 1/4 c. whole wheat flour can be substituted for the all-purpose flour. For optimum flavor, wrap bread overnight and serve the next day. This bread is excellent toasted. Zucchini Gratin

Ingredients
6 tablespoons (3/4 stick) unsalted butter, plus extra for topping
1 pound yellow onions, cut in 1/2 and sliced (3 large)
2 pounds zucchini, sliced 1/4-inch thick (4 zucchini)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
2 tablespoons all-purpose flour
1 cup hot milk
3/4 cup fresh bread crumbs
3/4 cup grated Gruyere
Directions
Preheat the oven to 400 degrees F.
Melt the butter in a very large (12-inch) saute pan and cook the onions over low heat for 20 minutes, or until tender but not browned. Add the zucchini and cook, covered, for 10 minutes, or until tender. Add the salt, pepper, and nutmeg and cook uncovered for 5 more minutes. Stir in the flour. Add the hot milk and cook over low heat for a few minutes, until it makes a sauce. Pour the mixture into an 8 by 10-inch baking dish.
Combine the bread crumbs and Gruyere and sprinkle on top of the zucchini mixture. Dot with 1 tablespoon of butter cut into small bits and bake for 20 minutes, or until bubbly and browned.

Zucchini rolls: a super easy recipe to try for dinner
INGREDIENTS
Extra virgin olive oil
1/2 onion
30g (1/4 cup) of all-purpose flour
260ml (1 cup) of milk
40g of speck
Salt
Pepper
3 zucchini
Salt
Flour
2 eggs
Breadcrumbs
Oil for frying
METHOD
1. In a pan add the olive oil and onion and fry until onion becomes translucent. Add the flour, and milk and cook on low heat until thick. Finally add the speck, season with salt and pepper, and mix to combine.
2. Cut the zucchini on mandoline and transfer them to the pot full of water. Let it boil for 1 minute and then remove from the heat.
3. Arrange the zucchini slices on the cutting board and spread the prepared bechamel. Roll to itself the each one.
4. Pass the zucchini rolls first to the flour, then to the eggs, and then finally coat with the breadcrumbs.
5. Transfer the zucchini rolls to the pot with hot oil and fry until they are golden brown.
6. Serve them all together and enjoy.

❗Before grinding the zucchini it’s enough to cut just one end of it. Grab zucchini uncut end and start grinding the cut end. Ones you finish you will have the uncut end in your hand so this way you will not lose the last slice ????
❗For the topping you can use the vegetables you like, for example mushrooms, bell pepper etc.

????Ingredients :
1 large zucchini
1/4tsp salt
1 tomato
4tbsp gram flour
10g parsley
1 garlic clove
1tsp onion flakes
1 cup fresh spinach
plant-based mozzarella cheese
olive oil
????Method:
Grate 1 zucchini.
Season with 1/4tsp of salt.
Mix well and set aside for 10 minutes.
Cut 1 tomato into half moon slices.
Squeeze grated zucchini over a bowl to remove excess water.
Transfer the mixture into a mixing bowl.
Add 4tbsp gram flour.
Chop 10g fresh parsley and 1 garlic clove and add to zucchini mixture.
Mix in 1tsp onion flakes.
Add salt to taste.
Stir well until all the ingredients are combined.
Transfer the mixture into a greased frying pan and spread out into a circle.
Fry on a low heat covered with a lid for about 7 minutes or until the bottom is crispy brown.
Flip it gently to other side.
Then add topping. I used 1 cup fresh spinach and tomato.
Add grated plant-based dairy free mozzarella cheese.
Fry for another 5 minutes.
Sprinkle with fresh chopped parsley and chilli flakes.
Serve immediately and enjoy!????

Ingredients
▶️5 zucchinis
▶️1 tsp salt is used to marinate the zucchinis
▶️1/3 cup all purpose flour
▶️a pinch of salt
▶️a pinch of black pepper
▶️1/3 cup scallion
▶️3 eggs
▶️1/2 tsp red chili pepper flakes
▶️serve with yogurt.
Method
1. grate the zucchini in a large bowl
2. add 1 tsp of salt and marinate the zucchini about 10 minutes
3. then squeeze out the water
4. add 1/3 cup all-purpose flour, a pinch of salt, a pinch of black pepper, 1/3 cup scallion, 3 eggs, 1/2 tsp red chili pepper flakes
5. mix well
6. put 2 tbsp vegetable oil/ coconut oil in frying pan.
7. each zucchini pancake is 1/3 cup batter, put in medium heat frying pan, cook each side for about 3-4 minutes
