How to make Newfoundland Cod Fish Cakes
Filmed at the Yellow Belly Pub, St John's, Newfoundland & Labrador featuring chef Brenda O'Reilly
Recipe:
5 lbs potato, peeled cut in half
3lbs Fresh Cod fillet
1 lb unsalted butter
2 cups Feta cheese, diced
1 leek, trimmed, washed & diced
Salt & pepper to taste
Oil for frying
Flour for dredging
Cook potato in boiling salted water until fork tender. Strain, put potato back in pot mash with ½ lb butter, cover keeping potatoes warm. Poach cod in water with ¼ lb butter, when cooked (about 10 minutes), drain. Sautee leeks in ¼ lb butter until tender, add leeks & feta to potato mixture, blend together, add cod stir thru, season with salt & pepper. Let mixture cool. Form potato mixture into fish cakes about 2.5 inches in diameter.
Add ½ cup oil in frying pan, warm over medium heat. Dredge cod cakes in flour, pan fry until golden, turning over to cook both sides. You may need to add additional oil as you continue to fry the cod cakes.
Serve immediately with mustard pickles
OLD SCHOOL FRIED FISH CAKES (T.G.I.F. FISH SEGMENT OF THE WEEK)
Hey yall its FRIDAY!!!!
Here is this weeks fish of the week:
OLD SCHOOL FRIED FISH CAKES:
RECIPE:
1# tilapia(COOKED)(any white fish will do as well)
1/2 cup mayo(I use dukes)
1 tablespoon Dijon mustard
1/2 green onions(sliced)
1/2 cup yellow onions(chopped finely)
2 whole eggs
1 tsp fresh lemon juice
2 cups bread crumbs
salt and pepper to taste
1 tsp Cavender's Greek seasoning
2 tsp sweet r spicy r shake
BREADING/COATING INGREDIENTS:
2 Cups all purpose flour
2 Cups panko bread crumbs
3 eggs beaten
DIRECTIONS:
place fish in large mixing bowl
flake the fish in large pieces(don't flake too small)
add other ingredients and mix together gently(you don't want to mush up the fish too much)
Scoop fish cake mix into large circles
bread(coat) fish cakes with :
flour, egg and Japanese(panko) bread crumbs
fry in vegetable oil (medium heat) until golden brown on each side(usually takes 3-5 minutes each side)
Enjoy with tartar sauce or cocktail sauce
