1/3 c Softened unsalted margarine 1/3 c Plain lowfat yogurt 1/4 c Packed brown sugar 1 ts Vanilla 1 c Rolled oats 1/4 ts Baking soda 2 tb Chopped walnuts 1/4 ts Grated orange peel Preaheat oven to 325~. Blend margarine, yogurt, sugar, and vanilla. Mix in remaining ingredients. Shape dough by rounded teaspoons into 1 inch balls. Place 2 in apart on an ungreased cookie sheet; flatten slightly with fork. Bake at 325~ for 12 to 15 minutes. Remove immediately from baking sheet. -----

Eggless Fruit & Nut Cookies | Whole Wheat Cookies Recipe | No egg, Refined Sugar Free
These Fruit & Nut Cookies are eggless and refined sugar free! Whole wheat flour adds a nice nutty aroma to them. And the nuts and dried fruits make them a tasty indulgent treat for any occasion!
INGREDIENTS *3/4 cup whole wheat flour *1/4 tsp baking soda *1/4 tsp cinnamon powder *1/2 tsp vanilla extract *1/4 cup melted butter *3 tbsp coconut sugar/ jaggery powder/ honey *1 tbsp flaxseed powder and 1 1/2 tbsp water for the flax gel *1 tbsp milk *some mixed nuts, seeds and dried fruits as toppings
INSTRUCTIONS 1- In a blender add some flaxseeds and grind them into a fine powder. Take 1 tbsp from this flaxseed powder and add it in a small bowl along with 1 1/2 tbsp water. Give it a stir and let this mixture rest for around 15-20 minutes or till it thickens and turns into a flax gel. 2- In a medium sized bowl, add the melted butter, coconut sugar, vanilla extract and the flax gel. Give a good whisk till well combined. 3- Now add in the flour, baking soda, cinnamon powder and mix to combine. Stir in the milk and continue mixing till it turns into a soft dough. Refrigerate the dough for 30 minutes. 4- Take a small portion from the dough, shape it into a ball and place it on a parchment paper lined baking pan. Similarly shape more cookies and press them lightly with your fingers. 5- Sprinkle the nuts and dried fruits on top of each cookie and press with your fingers so they stick nicely. Bake the cookies at 180°C/ 350°F for 15 minutes. Allow to cool and enjoy!
