4 c Zucchini; peeled, seeded, -sliced 1/8" thick 3/4 c Sugar 2 tb Tapioca 5 tb Lemon juice 1/2 ts Salt 2 ts Cinnamon 1 ts Nutmeg 2 tb Cornstarch 1/2 c Raisins
TOPPING:
1/2 c Margarine; softened 1/2 c Sugar 1/2 c Flour Mix all Pie ingredients together and place in a deep dish unbaked pie shell. Combine the Topping ingredients and pour on top of pie. Bake at 375~ for one hour. Dot top of pie with margarine. 6 cups zucchini 1 cup sugar 1/2 cup brown sugar 1 1/2 teaspoons cinnamon 1 1/2 teaspoons cream of tartar 2 tablespoons cornstarch 1/2 teaspoon salt 2 pie dough/crust Butter for topping
Peel zucchini and cut lengthwise to remove seeds. Slice into small chunks, 1/4 inch thick. Pour into pot and cover with water. Boil until tender, drain and let cool. Combine zucchini with remaining ingredients until smooth and pour into pie crust. Top with other crust, and brush with butter. Bake at 450 degrees for 10 minutes, then reduce the heat to 350 degrees for 45 minutes.

Zucchini Pie That Tastes Like Apple Pie
This pie tastes like apple pie, but there isn't a single apple in it. The filling is actually zucchini. It's a great way to use up the extra when your garden is producing zucchini faster than you can pick them. #shorts

Zucchini Crisp (Mock Apple Crisp)
8 cups zucchini (pealed, cut in half, then cut like apple wedges) 3/4 c lemon juice 1/4 c water
Cook until tender Drain well Mix in: 1 c sugar, 1.5 teaspoon cinnamon
Pour into 9X9 pan
Topping: Mix: 1 cup flour 3/4 c brown sugar 1/2 stick of butter mix together until crumbly, then sprinkle on top of cooked zucchini wedges
Bake at 350 degrees for 40-50 minutes
