Ritz Mock Apple Pie | Delish
Apple pie without any apples? Sorcery.
DIRECTIONS
1. Heat oven to 400ºF.
2. Make filling: Mix water, granulated sugar and cream of tartar in large saucepan. Bring to boil on medium-high heat. Add crackers; simmer on medium-low heat 5 min., stirring occasionally.
3. Line 9-inch pie plate with crust as directed on package; fill with cracker mixture. Sprinkle with lemon juice and cinnamon.
4. Make topping: Combine all topping ingredients.
5. Bake 10 minutes at 400, reduce to 350 and cover edges of pie crust with foil. Bake 18-20 more minutes, or until pie filling has set. It shouldn't jiggle a lot when moved. Cool before serving.

1/3 c. unsalted butter, melted

Mock Apple Pie | Dessert
If you're craving a homemade apple pie but unfortunately don't have any apples at the moment, don't you worry, you can get that same great apple pie taste with this mock apple pie recipe! You won't believe there aren't any apples in this recipe when you first try it!

Ritz Cracker Mock-Apple Pie, Can This Apple-less Apple Pie Taste Like The Real Thing? Let's Find Out!!!!!
Filling
1 2 cups water
2 3/4 cup granulated sugar
3 2 tsp. cream of tartar
4 30 Ritz Crackers
5 1 ready-to-use refrigerated pie crust (1/2 of 425-g pkg.)
6 1 Tbsp. lemon juice
7 1 tsp. ground cinnamon
Topping
8 25 Ritz Crackers, crushed (about 1 cup)
9 1/2 cup packed brown sugar
10 1/2 tsp. ground cinnamon
11 1/3 cup non-hydrogenated margarine, melted
12 2 cups Cool Whip Whipped Topping

In Today’s video, I will show you how I can Zapple Pie Filling for shelf-stable storage.
When your garden is giving you more zucchini than you know what to do with, and your neighbors run when they see you coming with more zucchini, use some to make mock apple pie filling!!
Not everything I do is USDA/FDA approved. I believe in “MY KITCHEN, MY RULES” and I do not think untested necessarily means unsafe. I am not telling anyone that this is the way it should be done. I am only sharing with you how I do it in my kitchen. I have done my research and I am comfortable with doing it this way. I strongly encourage you to do the research and do what works for you. The National Center for Home Food Preservation is a great resource, as well as the Ball website. I have left a link below. There are also several groups on Facebook and lots of videos on YouTube to help you get started and find information.

Today’s recipe ingredients:
10 cups of diced , seeded, peeled zucchini
2 cups apple juice or cider
3 cup of sugar
1/8 teaspoon of ground cloves*
1/8 teaspoon of ground nutmeg*
2-3 Cinnamon sticks*
*individual spices can be replaced with apple pie spice
In a heavy large sauce pan, put the five ingredients and simmer until sugar is dissolved.
Add diced Zucchini and simmer for approximately 10 minutes.
Put 2 Tablespoon of lemon juice in each sterile quart jar.
Fill jars with zucchini and syrup, leaving 1/2 inch headspace.
With moist paper towel, wipe jar rims to remove any syrup, this will insure a good seal.
Place sterilized seals and rings in place, finger tighten and place in canner with boiling water.
Bring back to boil and Process for 15 minutes.
