Chipotle Sauce; * 1 lb Ground Beef 1 lb Ground Pork 2 Eggs; Large 1/2 c Dry Bread Crumbs 1/2 c Milk 2 tb Onion; Finely Chopped 2 tb Fresh Cilantro; Snipped 2 ts Salt 1/2 ts Pepper * See Sowest 2 for recipe. Prepare Chipotle Sauce and set aside. Mix remaining ingredients together and shape into 1 1/2-inch meatballs. Heat sauce and meatballs to boiling; then reduce the heat. Cover and simmer until meatballs are done, about 20 minutes. Serve with hot cooked rice or noodles, if desired.

Here's my version of the Mexican dish Albondigas al Chipotle. Meatless black bean meatballs with a Chipotle sauce. It's vegan, gluten-free, weight loss and diabetic friendly. Hope you try it out. :-)

Meatballs Ground Beef (340g / 12oz) 1 Egg ¼ cup breadcrumbs 2 finely chopped garlic clove ½ tsp salt ½ tsp black pepper
Tomato Sauce 1 Tbsp Chipotle en adobo (or to taste) 2 tomatoes 1/8 of an onion (20g) 2 garlic cloves ½ cup tomato puree 1 tsp chicken bouillon ½ cup water Potatoes 120g (optional)
Instructions -Mix the ground beef with the egg, breadcrumbs, salt, and pepper, and chopped garlic. -Form the meatballs and lightly sauté them in oil. -Boil the tomatoes until the skin starts to come off. Peel them and put them in the blender with the onion, the 2 garlic cloves, ½ cup water and ½ cup tomato puree. -In a pot put some oil and then pour the blended sauce. Let it cook and add the chicken bouillon. -Add the meatballs, and the potatoes into sauce. -Let them cook until tender.
