QUARANTINE COMFORT FOOD! EASY LENTIL CHILI RECIPE!
Hey friends! Today I am in the kitchen with a super easy recipe that will make you feel all warm and cozy. This lentil chili is healthy, hardy, and quarantine approved!
Ingredients:
7 cups broth
1 chopped onion
1 TBS chopped garlic
1 TBS oil
2 TBS tomato paste
1 28oz can crushed tomatoes
3 carrots, chopped
1 cup lentils (rinsed)
1/2 TBS chili powder
salt & pepper to taste
2 TBS Worcestershire sauce

This is a super easy beef chili recipe with lentils, perfect for those cool/cold nights!
Serves: 6 (about 1 cup/serving)

Total fat 5.4 g | Carb. 23.5 g | Fiber 3.8 g | Sugar 6.7 g | Protein 21 g
INGREDIENTS:
-1 tbsp olive oil
- 1/2 cup chopped white onion
- 5 cloves garlic, minced
- 1 lb lean ground beef (93% lean)
- salt and pepper
- 1.5 tbsp chili powder
- 2 tsp cumin powder
- 1 28-oz can fire roasted crushed tomatoes
- 1 16-oz can of lentils, rinsed and drained
- 1cup water
- 3 medium-sized carrots, chopped
Serve with a dollop of plain Greek yogurt or sour cream and chives ????

This Jalapeno Chili Cornbread Casserole is an easy vegan comfort food casserole recipe with a quick jalapeño cheddar cornbread crust baked right on top! It’s warm and savory and comes together in one dish.
Everyone loves a good comfort food casserole and this chili cornbread casserole is especially delicious – so saucy and flavorful. It all starts out with a savory vegan lentil bean chili which is topped with an addicting maple sweetened jalapeño cornbread crust. You’ll find it difficult to stop nibbling away at that cornbread topping it’s so good with that hint of sweetness that balances out the heat from the chili and jalapenos. The cornbread is delicious and moist because of being baked on top of the chili!
Not only is it this vegan cornbread casserole hearty, but it’s also quick to pull together in one dish. You mix all the chili ingredients in the dish and pre-bake the chili, top with the cornbread mix, and pop this back in the oven until it’s all ready and bubbly.

Hearty Red Lentil Stew (Chili Sin Carne) & Stone Ground Cornbread

RECIPE: from Julieanna Hever, MS, RD's The Vegiterranean Diet
STONE GROUND CORNBREAD
Wet ingredients
1 1/2 Tbs ground flaxseed
1 c unsweetened almond milk
Mix together and set aside to form a gel for a few minutes
Then add 1/2 c applesauce and 1/2 c maple syrup and combine with the gel mixture
In a separate bowl combine::
1 c corn meal
1 c Bob's Red Mill gluten free all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Add the dry ingredients into the bowl with the wet ingredients and mix well with a large spoon or whisk. Then gently mix in:
1 c roasted corn (fresh or frozen)
1 Tbs canned diced green chilis (optional)
Drop into a silicon muffin pan and bake at 350 degrees F for 30-35 minutes, until lightly browned and a toothpick comes out clean
HEARTY RED LENTIL STEW (CHILI SIN CARNE)
2 carrots, chopped
1 red bell pepper
1 small jalapeño, chopped
2 celery stalks, chopped
Add chopped vegetables to an Instant Pot (electric pressure cooker - see link above) or a stock pot.
2 c red lentils, rinsed and drained
1 can garbanzo beans, rinsed and drained
1 large can fire roasted tomatoes with liquid
1 1/2 Tbs chili powder
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp ground chipotle powder
1/2 tsp red pepper flakes
1 pkg organic veggie tempeh, cubed
2 Tbs fresh lemon juice
1 shake black pepper
1 shake wild porcini salt (from Williams and Sonoma)
3 cups organic vegetable broth
Set Instant Pot on manual setting for 10 min. When finished, release the pressure and add the juice from 3 small limes with zest and 1/4 cup of fresh cilantro.
