Today we're making Italian lentil soup. This is such a simple and comforting soup to make. As always, we recommend saving those Parmigiano rinds so you can add them to soups just like this one. We hope you enjoy this lentil soup recipe!

ITALIAN LENTIL SOUP PRINT RECIPE:
INGREDIENTS WITH GRAM AMOUNTS
1/4 cup (54 grams) extra virgin olive oil - plus more for finishing
1 medium onion - diced
2 ribs celery - diced
2-3 medium carrots - diced
1 teaspoon (~2 grams) dried oregano
3 ounces (84 grams) tomato paste
8 ounces (226 grams) canned plum tomatoes hand crushed
8 ounces (226 grams) baby spinach
8 cups (1890 grams) water
16 ounces (454 grams) brown or green lentils see notes below
1 rind Parmigiano Reggiano (optional)
salt and pepper to taste

Stove Top ITALIAN 15 Bean Soup Recipe | BEST Bean Soup | Soup Recipes
INGREDIENTS:
1 pd. sweet Italian sausage - casings removed
1/2 pd. ground beef
1 - 20oz bag of 15 beans - rinsed, drained and check for any unwanted debris and toss seasoning packet
8 cups chicken broth
1 cup diced onion
2 stalks diced celery
2 diced carrots
2 cups diced cabbage
4 cloves minced garlic
1/4 tsp thyme
1/2 tsp. oregano
1 tsp. parsley
2 bay leaves
1 tsp. chicken bouillon
pinch of red pepper flakes - optional
pinch salt
1/4 tsp. black pepper
In a soup pot on medium high heat add Italian sausage. Chop and brown.
Add ground beef. Chop and brown.
Add diced onions, celery, carrots and a pinch of salt and 1/4 tsp. black pepper.
Cook and stir for 3-4 minutes.
Add minced garlic and diced cabbage. Cook and stir for one minute.
Add rinsed and drained beans and chicken broth. Stir to combine.
Turn heat up to bring to simmer.
Add chicken bouillon, bay leaves, red pepper flakes, thyme, oregano and parsley.
Stir, cover and simmer for 1 1/2 hours occasionally stirring.
After cooking 1 1/2 hours:
1 - 28oz. can diced tomatoes
3/4 cup diced bell pepper
1/4 tsp. more of thyme and oregano
1/4 tsp. garlic powder
Cook an additional 30-45 minutes or until beans are tender.
Add 1/4 cup fresh chopped parsley and stir.
Serve and enjoy.

The recipe is
Ingredients
▢ 1 package Hambeens® 15 BEAN SOUP® with seasoning packet
▢ 1 pound Italian sausage mild or spicy
▢ 1 large onion diced
▢ 8 cups low sodium beef broth
▢ 1 red pepper diced large
▢ 3 cloves garlic minced
▢ 2 teaspoons Italian seasoning
▢ 15 ounces diced tomatoes with juices
▢ 1 zucchini sliced ⅛ thick
▢ 1 cup marinara sauce or pasta sauce
▢ 1 teaspoon red wine vinegar
For Serving
▢ parmesan cheese
▢ fresh parsley
▢ fresh basil
▢ garlic toast
Instructions
Rinse beans and drain. Sort any unwanted debris and set seasoning packet aside.
Brown sausage and onion in a skillet over medium heat until no pink remains. Drain fat.
Place beans, sausage & onion, broth, red pepper, garlic, and Italian seasoning in a 6qt slow cooker.
Cook on high 5 hours (or low for 7-8) or until beans are tender.
Once beans are soft stir in diced tomatoes, zucchini, seasoning packet, marinara sauce, and red wine vinegar. Cook for additional 45-50 minutes or until zucchini is tender.
Serve with toppings and garlic bread if desired.
Recipe Notes
Ground beef can be substituted for ground sausage.
Do not add any acidic ingredients (like tomatoes) until the beans have sfotened.
Zucchini should be thinly sliced to ensure it cooks through.

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.

How to Make an Italian Farro & Bean Soup | Pasta Grannies
This Italian nutritious, delicious farro and bean soup is an example of cucina povera, frugal food, from the mountainous region of Tuscany called Garfagnana. The ancient grain 'farro' is not the same as 'spelt', but you can use spelt instead. In America, it's called emmer wheat.
