Vegetable oil spray 1 1/2 cups summer squash
10 ounces lima beans
1 yellow onion
chopped
1/2 cup bulgur :
coarse or medium
3 tablespoons chopped parsley
3 cloves garlic finely chopped
2 teaspoons chopped fresh basil
28 ounces chopped tomatoes :
canned,low-salt
undrained 1 beef bouillon cube
2 tablespoons Parmesan cheese -- slivered
Freshly ground black pepper
Summer Squash: coarsely chopped summer squash (yellow zucchini) or crookneck pa ttypan squash or diced winter squash such as butternut, zucchini. Lightly spray a nonstick 5-quart soup pot with vegetable oil. Add the squash, l ima beans, onion, bulgur, parsley, garlic, and basil and saute over medium heat for 5 to 8 minutes, adding a tablespoon or two at a time of water to prevent s ticking. Add thetomatoes, 3 cups water, bouillon cube, and bring to a boil. Red uce the heat to very low, and simmer, uncovered, for 15 minutes. Add Parmesan c heese and salt, if using, and pepper to taste. Ezogelin Soup - A mildly Spiced, Hearty, Mint-flavored Lentil Soup
Story of this traditional Turkish soup goes back to early 1900's. In the region of Gaziantep, a beautiful lady, Zöhre, later nicknamed as ‘Ezo’, (meaning attractive or beautiful), ended up marrying a man chosen for her by her elders. After a couple of happy years, her husband mistreated her so badly that she was eventually granted a divorce, something quite unusual at that time.
After 6 years of solitude she had again no choice but to marry her cousin who later moved to todays Syria which was part of the Ottoman Empire before the First World War.
Before her 2nd marriage could take place and in order to win the favor of her mother in law, Ezo was asked to prove her worth in the kitchen by creating a dish and she created a spiced lentil soup using the simple ingredients she had at hand – it is this soup she made that we now know as ‘Ezogelin’, or ‘Beautiful Bride's soup.
Like many stories, this one also doesn’t end well for Zöhre (Ezo). Soon after the marriage, the Ottoman Empire collapsed and Turkey was founded. The borders between Syria and Turkey were established. Ezo now living in a foreign land, with no money and without any hope to see her hometown again, spent her years in an utter misery. It is said that because of her deep longing for her hometown, Ezo died of tuberculosis in 1956 and has since become a Turkish legend, depicted in popular films and lamented in folksongs.
Her name lives on in this popular soup now, which is now traditionally fed to brides to sustain them for the uncertain future that lies ahead.

Ingredients:
• Red lentils, 1 cup (200 g)
• Rice, 1/4 cup (30 g)
• Bulgur, 1/4 cup (45 g)
• 1 onion
• 2 cloves of garlic
• 1 tbsp chili paste
• 1 tbsp tomato paste
• 1 cup beef stock
• 2 tbsp butter
• 1 tbsp olive / vegetable oil
• 2 tsp dried mint
• 1 tsp black pepper
• 1 tsp chili flakes
• 1 tsp cumin
• ½ lemon
• Salt to taste

Today I want to share with you, our number one soup; lentil soup. ???? I have never met anyone who doesn’t like this soup. It was one of the five dishes I loved when I was a child. It is very easy to make, cheap, nutritious and keeps you happy and warm for along time. Plus, with small tricks you can turn this soup into a fulfilling main course with low calories!

Servings: 6-8
Difficulty: Easy
Prep time: 3 minutes
Cooking time: 15-20 minutes
2 cups red lentils
8 cups water
1 large onion, roughly chopped
2 tablespoons butter
2 tablespoons flour
1 cup chicken stock
1 heaped teaspoon salt
• Rinse the lentils for about two minutes under cold running water to remove any excess dirt and starch.
• Place the lentils and onion in a medium sized pot and fill with the water.
• Boil for 10-15 minutes until it becomes a thick puree.
• Collect the white foam forming on top while boiling. This foam gives the soup a greyish color and makes it harder to digest.
• To make the meyane (roux), melt the butter in a pan and add the flour.
• Cook for a couple of minutes until it smells like roasted nuts and becomes light brown.
• Pour in the chicken stock into the pan and whisk constantly.
• Add the mixture to the soup and season with the salt.
• Lastly, blend the soup with an immersion blender till the texture becomes creamy and smooth.
Your velvety lentil soup is ready and it is such a good base that you can top with many things and turn the soup into an incredible meal. For the classical one, top with red pepper flakes and squeeze some lemon. In Cyprus, it is really common -and delicious- to add black olives to soup and adding croutons is always a good idea. You can always sprinkle some roasted kadayif instead of croutons. If you want your soup as a main coarse, top with some meatballs, red beans and coriander. For a lighter version, salad, croutons and some sesame seeds would be great! Last but not least, Bahar’s favorite - yogurt, black pepper, red pepper, olives and parsley
