Enri's ITALIAN STYLE LENTIL SOUP Recipe
In this video, I show you how to make my delicious Italian-Style Lentil Soup. This soup is vegetarian and gluten-free. It is prepared with a sofrito made with EVOO, onion, garlic, celery, and carrots. In addition, it has plenty of Roma tomatoes. Its characteristic flavor is given by rinds of Parmesan cheese and fresh thyme. At the time of serving, I add plenty of freshly grated Parmigiano Reggiano.

This is just a really great, easy lentil soup recipe. Because no one should have to settle for bland lentil soup!
No need to soak lentils.
How to Make LENTIL SOUP Like an Italian
Lentil soup is bold, hearty and bursting with flavour. In Italy, it is a New Years' tradition to eat this soup at the stroke of midnight. My lentil soup recipe has an aromatic twist - fresh rosemary and oregano which I’m convinced Nonna would approve of, just the smell in your kitchen is enough to tempt tastebuds! Each bowl is filled with soft lentils drowning in a delicious herby tomato broth then topped with crispy bread bites and a fresh parsley garnish.

An easy and delicious Lentil Soup to make!
One 16 ounce bag brown lentils (equals 1 pound)
1 large onion, diced
2 large carrots, peeled and diced small
1 large celery stalk, diced small
2-3 garlic cloves, minced fine
1 tablespoon dry oregano
2 bay leaves
2 quarts of vegetarian or chicken broth
2 cups crushed tomatoes (or pureed tomatoes)
1 teaspoon kosher salt added to veggies in pan, extra later to taste
ground black pepper to taste
This CHEAP & EASY Lentil Soup Recipe is Life Changing!
This healthy and easy lentil soup recipe comes together in no time and is absolutely loaded with vegetables! Most of the ingredients are common pantry ingredients and rather inexpensive vegetables so this is a very budget friendly recipe for those looking to eat healthy and not break the bank. This is also a vegetarian friendly version with no meat based products. Leave out the cheese rinds and then it’s vegan too! The recipe makes a lot of soup that you can freeze and store for dinner or lunch on a busy day with very little time to cook.
INGREDIENTS
• 1 medium onion, small dice
• 3 celery ribs, small dice
• 2 medium carrots, small dice
• 1 shallot, finely chopped
• 2 russet potatoes, peeled and cut into ½ inch cubes
• 5-8 garlic cloves, minced
• 2-3 sprigs fresh parsley, finely chopped
• 1 lb dried lentils, rinsed & drained
• 2-3 tbsp olive oil
• 3 tbsp tomato paste
• 2 tsp Chef Ange Base Seasoning -
• 1 tsp smoked paprika
• 1 tsp Italian Seasoning
• 15 oz can fire roasted diced tomatoes
• 1 tbsp roasted garlic bouillon paste
• 8 cups vegetable stock
• 2 tsp white wine vinegar
• ½ - 1 tsp crushed red pepper
• 2-3 dried bay leaves
• 2 pieces parmesan cheese rinds
• 2 tbsp garlic & herb spice blend
• 2 cups baby spinach
