A HEARTY 'RIBS' STEW: THE PERFECT SUNDAY COMFORT FOOD⎜VEGAN
This hearty stew is one of Brazilian treasures. It is originally from the state of Minas Gerais and its made from ribs but in this case, I have found a perfect substitute for it: Oyster mushrooms, that due to their extreme heartiness and shredability, makes it the perfect ribs substitute. The ingredients are easy to get and its ready in no time! Per-fection!
A HEARTY 'RIBS' STEW: THE PERFECT SUNDAY COMFORT FOOD, VEGAN
INGREDIENTS:
400 g (14.1 oz) of oyster mushroom, shredded
500 g (18 oz) of raw frozen cassava, yuca, manioc)
1 medium onion, diced
olive oil
3 tablespoons of soy sauce
2 tablespoons of tomato pure
600 ml of veggie broth (or more, if needed)
salt to taste
black pepper to taste
1 teaspoon of dried parsley
1 teaspoon of garlic powder or 3 cloves of garlic, minced
1 medium red bell pepper, diced
fresh parsley
CUPS MEASUREMENT:
1 CUP: 250 ml
1/2 CUP: 125 ml
1/3 CUP: 83 ml
1/4 CUP: 62 ml
METHOD:
Add olive oil to a skillet on medium heat, when hot, add the shredded mushroom and the soy sauce. Stir and let it brown.
Add olive oil to a thick pot, on medium heat, when hot add the onions, stir until golden brown.
Add the tomato pure, stir for 3 minutes, add the red bell peppers, sauté them for 3 minutes.
Add the remainder of the ingredients except the parsley. Turn the heat to medium low and let it cook for approximately 20 minutes. This time will vary according to the cassava you're using. The stew is ready when the cassava is cooked through. We are looking for a soft but firm cassava. If you cook it too long it will disintegrate and your stew will be really thick.
You may need to add some more water along the cooking.
When the stew is ready, turn off the heat and add fresh parsley for garnishing.

Braised Country-Style Ribs with White Beans | Emeril Lagasse
Tender and full of flavor, this hearty dish is easy, delicious, and inexpensive to make. It makes for the perfect comforting dinner on any chilly night.
BRAISED COUNTRY-STYLE RIBS WITH WHITE BEANS
SERVES 6 TO 8
3 pounds country-style pork ribs or rib chops
1 tablespoon coarse salt
2 teaspoons freshly ground black pepper
1/4 cup olive oil
2 cups diced onions
1 cup diced green bell pepper
1 cup diced celery
2 tablespoons minced garlic
1/4 cup all-purpose flour
1/2 pound dried white navy beans
8 cups chicken or beef stock
1 (14 1/2-ounce) can diced tomatoes
2 tablespoons chopped fresh sage leaves
Steamed white rice, for serving (optional)
Cooked kale, for serving (optional)
Place ribs on a rimmed baking sheet and season both sides with salt and pepper. Heat a large Dutch oven over medium heat. Add olive oil and heat until hot. Working in batches, add ribs and sear until golden brown, about 5 minutes. Turn ribs and sear, about 5 minutes more. Transfer ribs to baking sheet and repeat process with the remaining ribs.
Add onions, bell peppers, and celery to the Dutch-oven and cook, stirring occasionally, until onions are translucent, and bell pepper and celery are lightly caramelized, 6 to 7 minutes. Add garlic and cook until fragrant, about 30 seconds. Sprinkle vegetables with flour and stir with a wooden spoon until well combined. Cook, stirring constantly, for 2 minutes. Add stock to the pot and stir to combine. Bring to a boil and reduce heat to a simmer. Add diced tomatoes, beans, seared ribs, sage. Cover and let simmer, stirring occasionally, to prevent sticking, for 1 1/2 hours. Adjust seasoning and continue to cook until both the ribs and the beans are tender, about 30 minutes more. Serve hot over cooked kale or steamed rice, if desired.
