How To make Gulai Kambing (Spiced Lamb)
1 3/4 lb Lamb, fresh
2 ea Onion
3 ea Thai chile
1 x Ginger, fresh; 3/4" knob
1 x Lemon grass root, 1/2" knob
1 ea Lemon grass, stem
2 ea Garlic clove
8 ea Macadamia nut
2 ea Tomato, ripe
1/3 c Oil
1/2 t Cardamom, ground
1/2 t Cumin powder
1/2 t Turmeric
1/4 t Fennel powder
1 ea Cinnamon stick; 2"
4 ea Cloves, whole
1 x Salt; to taste
1 x Pepper, black; to taste
4 c Coconut milk
Calories per serving: 553 Fat grams per serving: 26 Approx. Cook Time: 1:00 Cut the lamb into bite-size chunks. Chop the onions, chiles, ginger, lemon root and lemon grass. Crush the garlic and grind the macadamia nuts. Skin the tomatoes and cut the flesh into small dice. Heat the oil in a large pan, add the onion, chiles and garlic and saute until the onion becomes translucent. Then add the lamb, ginger, lemon root, lemon grass and tomato and cook for another three minutes, stirring frequently. Add the spice powders, cinnamon stick and cloves and season to taste with salt and pepper. Pour in the coconut milk and bring to the boil, stirring constantly, then lower heat and allow to simmer until the meat is very tender; approximately 45 minutes. Serve immediately with steamed rice.

1 liter air mendidih
½ liter santan encer

Bumbu dihaluskan:
1 sdm biji ketumbar
1 sdt biji jintan
segenggam cabe merah
8 siung bawang putih
5 bawang merah
4 butir kemiri
sepotong kunyit
1 sdm garam
segelas air
Bumbu-bumbu lainnya:
segenggam bawang merah
sepotong lengkuas, memarkan
sepotong jahe, memarkan
3 lembar daun salam
8 lembar daun jeruk
1 kayu manis
2 asam kandis
1 kapulaga
1 tomat merah
LAMB CURRY
Ingredients:
1 kg leg of lamb
lamb liver
1000 ml boiled water
500 ml thin coconut milk
1 tbsp butter
Ground spices:
1 tbsp coriander seeds
1 tsp cumin seeds
a handful of red chilis
8 cloves garlic
5 shallots
4 candlenuts
a piece of ginger
1 tbsp salt
a glas of water
Other seasonings:
a handful of shallots
a piece of galangal
a piece of turmeric
3 indonesian bay leaves
8 kaffir lime leaves
cinnamon stick
2 kandis acid
1 cardamom
1 red tomato

Gulai di Indonesia pun mendapatkan pengaruh dari masakan khas India Selatan. Tapi yang membuat gulai di Indonesia berbeda adalah kuah gulai yang berwarna kemerahan, oranye dan kuning, dan juga rasa yang lebih gurih dan sedikit pedas.
Gulai kambing is one of my husband's favourite foods and is a typical dish in
Indonesia. Because there are lots of ethnic groups in Indonesia, gulai can vary depending on the region, even though it is a typical dish from Minangkabau,
West Sumatera. Gulai in Indonesia is influenced by South Indian cuisine.
However, what makes gulai in Indonesia different is the gravy (curry) as the broth in gulai in Indonesia is reddish, orange and yellow, also it has a more savoury taste and is a little spicy.

Red Stew Lamb Shank | in this video I share how to cook Red Stew Lamb Shank .
The ingredients are as below;
- 2 pieces lamb shank
Ingredients for boiling lamb shank
- 2 inches ginger ~ sliced
- 1 squash garlic ~ sliced
- 1 sachet soup spices
Ingredients of red stew
- 15 dried chilli stalks ~ soaked and seeded (3-4 tablespoons of chilli paste)
- 2 large onions
- 1 inch ginger
- 4 cloves garlic
*Finely grind all the above ingredients
- 2 tablespoons of soup spice powder
- 2 tablespoons chili powder
- 1 teaspoon black pepper (coarsely ground or pounded)
- 1 tablespoon cumin powder
- 2 tablespoons of coriander powder
- 2 cinnamon sticks*
- 4 cardamom*
- 3 star anise*
- 5 cloves*
*mix spices
- 1 piece of palm sugar
- 1 beef stock cube
- 2 tablespoons sweet soy sauce
- 3 tablespoons chili sauce
- 3 tablespoons of tomato sauce
A little cooking oil, salt and sugar to taste

Resep Rica Rica Daging Kambing || Stewed Lamb In Sweet And Spicy Sauce
Stewed lamb in sweet and spicy sauce
ingredients:
Mutton
Red chillis
Onion
Candlenuts
Ginger
Garlic
Galangal
Lemon grass
Kaffir lime leaves
Bay leaves
Sweet sauce
Brown sugar
Salt
Chicken powder
white pepper
Procedure:
• Prepare spice paste with red chillis, onion, candlenut, garlic and 2tbsp oil. Grind them into a paste.
• Heat small amount of oil in a wok and add spice paste into it.
• Add lemon grass, Kaffir lime leaves, bay leaves, pressed ginger and galangal in it and mix well.
• Add mutton and half glass of water in the wok then cover with a lid.
• Cook for 15-20 minutes.
• Add whole red chillis, salt, Chicken powder, white pepper, sweet sauce and crushed brown sugar in it and mix properly.
• Cover with lid and cook for few minutes.
• Ready to serve! Enjoy your meal.
