Grilled Pork Belly | Filipino Style
These grilled strips of pork belly, or Inihaw na Liempo, are marinated in a classic Filipino barbecue flavor that is sweet, savory, and slightly tangy. Although typically cooked over a charcoal grill, you can conveniently grill them in the oven, too.
Equipment
Convection oven, grill, or air fryer
Baking Sheet
Ingredients
2 pounds pork belly slices ½-thick
⅓ cup + 1 tablespoon soy sauce, regular or light
¼ cup lemon or calamansi juice
⅓ cup packed brown sugar sub: any sugar
¼ cup banana or tomato ketchup
6 cloves garlic minced or grated
Black pepper to taste
Dipping Sauce:
¼ cup distilled white or cane vinegar
1 tablespoon minced shallot sub:red onion
Bird's eye chilies to taste; chopped
1 teaspoon sugar
Salt and pepper to taste
Instructions
1. Combine soy sauce, calamansi or lemon juice, brown sugar, ketchup, garlic, and ground pepper (to taste).
2. Marinate pork belly slices and refrigerate for 4 to 8 hours.
3. Preheat oven to 425° F (218° C). Line a baking sheet with double layers of aluminum foil to make cleanup easier.
4. Arrange pork belly slices in a single layer and bake them for 20 minutes.
5. Over medium heat, cook leftover marinade for about 10 minutes until slightly thickened to prevent cross-contamination.
6. Remove the meat from the oven and brush it with basting sauce on both sides. Return it to the oven for another 20 minutes. Adjust baking time based on the thickness of the meat. The thinner the slices, the faster they cook.
7. To caramelize the outside, broil on low for about 3 minutes. Be careful not to burn them.
8. To make sawsawan or dipping sauce, combine the vinegar, shallot, chilies, sugar, salt, and pepper to taste.

Vietnamese Grilled Pork can be enjoyed with rice, noodle or by itself. just a few ingredients, you will have a whole party gather around the grill to munch away.
1/4 tsp Five Spice
1 tsp garlic powder
1/2 tsp black pepper
1 tsp sugar
2 Tbsp fish sauce
2 Tbsp soy sauce
2 Tbsp oil
3 Tbsp honey
2 Tbsp BBQ sauce
5 lb pork shoulder or butt
Optional:
1 Tbsp sesame oil
1 Tbsp chicken powder
3 Tbsp minced shallots
3 Tbsp minced lemongrass
1/2 tsp paprika or annatto powder
Can replace BBQ with Hoisin
Can replace Honey with Maple Syrup

Pan-grilled liempo or Grilled Pork Belly recipe which is easier and kinda healthier to make than traditional smoke grilling. In pan-grilled liempo recipe, you can still taste the signature smoky flavour without the need to get smoke from grilling. You wont be needing any special equipment, you only need your regular pan! Have some savoury and smoky pan-grilled Pork Belly, best partnered with rice and atsara. Yum!

INGREDIENTS:
1 kilo pork belly (liempo)
1 cup Sprite (or any lemon soda)
⅓ cup soy sauce
¼ cup calamansi juice
3 tablespoons oyster sauce
⅓ cup banana ketchup
1 bulb garlic (minced)
1 teaspoon black pepper
1 tablespoon brown sugar (optional)
Directions:
Wash and prepare the pork belly slices. Transfer them to a large container. Add the lemon soda, soy sauce, oyster sauce, calamansi juice, minced garlic, banana ketchup, ground black pepper and brown sugar (optional). Mix well using your hands until well combined. Cover the container and let them marinate for at least 1 hour.
Heat a pan using medium heat. Arrange the marinated pork in the pan and sear them for a few minutes. Flip them to sear the other side. Flip them a few times until both sides are browned and sizzling.
Pour the marinade in the pan and let them cook until the marinade is reduced and almost dried up. Flip occasionally to cook them evenly. Once they are caramel brown in color, they are ready.
Remove them from the pan and transfer to a chopping board. Slice them into serving pieces and then transfer to a serving plate. Enjoy this with some special toyomansi dipping sauce as an ulam or pulutan. Yum!
