Cheesy grilled pork tacos
Tacos Al Pastor
Ingredients
For marinade
4 guajillo peppers
1 oz. achiote paste
1/4 cup pineapple juice
1/4 cup white vinegar
3 garlic cloves
1 tsp. Mexican oregano
1/2 tsp. ground cumin
1/4 tsp. black pepper
2 cloves
1 tsp. salt
Achiote paste substitute
2 tsp paprika
1/2 tbsp white vinegar
1/4 tsp dried oregano
1 garlic clove
1/8 teaspoon ground cumin
For tacos
2 Lbs. pork butt Shoulder
Salt and pepper
1 white onion
1 pineapple
1 bunch cilantro
12 Corn or flour tortillas
Cut meat into 1 inch steaks. Season with salt and pepper. Guajillo peppers boil for 15 minutes. Blend all the ingredients for marinade and cover meat completely. Marinade for 1 hour. Grill the meat and pineapple and assemble the tacos. Cheese is optional (Al Pastor usually without cheese), but I love cheese ????

Grilled Pork Tacos, Al Pastor Style | KQED Food
These tasty al pastor tacos take time to marinate, but they are worth the wait. Serve them outside on the patio in the summertime alongside a couple of cold beers.
What You'll Need:
6 ancho chiles (2 1/2 to 3 ounces), wiped clean, seeds and stems discarded
1 1/4 cups chicken broth
1/2 cup water
1/4 cup white vinegar
2 tbsp vegetable oil
1 yellow onion, finely chopped
3 cloves garlic, minced
1 tbsp achiote paste
2 tsp ground cumin
2 tsp Mexican oregano
2 tsp kosher salt
1/3 cup orange juice
1 chipotle chile in adobo, plus 1 tbsp adobo sauce
1 tbsp brown sugar
2 lbs boneless pork butt roast
4 slices fresh pineapple, core removed, or 1 1/2 cups fresh pineapple chunks
1/2 small red onion, finely chopped
1/4 cup chopped fresh cilantro
1 small jalapeno, seeded and minced (optional)
Juice of 1 lime, plus more for serving
Corn tortillas, warmed

I had made pork belly like this in the past and honestly I had forgotten how delicious it is and how easy it is to make. Sometimes simple is the best! Sure sweet pork belly is good, but this recipe, in my opinion, blows the sweet pork belly out of the smoke.
All you need is a fresh pork belly, one, good seasoning and in this case we’re using APC WOW!, and a little time on the grill.
Total cook was only three hours on the Hasty Bake Roughneck starting at 350 degrees. Half way through the cook I rolled down the heat and maintained about 300 degrees until it was done at 200 internal then I wrapped it in foil and let it rest for 20 minutes.
The Hasty Bake Roughneck did a really good job, and because it has such distance between the fire and the pork belly, what you get is a delicious grilled AND smoked pork belly with a flavor that is outta this world.
While the pork belly was cooking, I made an easy salsa roja in the molcajete that pairs really well with pork belly tacos. And again, this was a super simple recipe too, and sometimes simple is the BEST.
To make the tacos, I chopped the pork belly, stuffed the taco full, topped it with the fresh salsa and some avocado slices.
