Green Beans with Walnuts (Mtsvane Lobio Nigvzit)

Yummy, elegant and simple to make! Walnut sauce transforms this pedestrian vegetable into a mouth-watering culinary delight. If you want to keep the flavor and nutrients intact, then steaming is a recommended way to cook green beans.
As much as it is served as an appetizer at formal parties among other vegetable pkhali dishes, it is also good for family dinner. It can be made a day ahead. As a side dish green beans go well with any chicken or meat dish. If you do not have all spices on hand, add those you have.
Ingredients for Green Beans with Walnuts (Mtsvane Lobio Nigvzit)
Serves 4 to 6
2 pounds green Romano or string beans, trimmed and cooked
2 cups shelled walnuts, pieces with halves
Coarse salt
3 or 4 garlic cloves, chopped
¼ cup water
1 teaspoon each: ground marigold, blue fenugreek, and coriander seed
½ cup finely chopped onion
1 cup chopped cilantro
2 to 3 tablespoons white wine vinegar
½ teaspoon hot red ground pepper or cayenne
½ cup pomegranate seeds or 2 tablespoons of finely chopped flat-leaf parsley for garnishing

Green beans almondine is an easy side dish to make. It is also elegant and incredibly delicious. We are going to blanch our green beans and then finish them in a skillet with garlic and red onion. Lemon zest and lemon juice bring this dish to a higher level making the flavors fresh and vibrant. Enjoy!

Green Bean Almondine
1 pound (454 grams) trimmed green beans
2 tablespoon unsalted butter
1/3 cup coarsely chopped almonds
2 tablespoons finely chopped purple onion
2 garlic cloves — minced
2 teaspoons lemon zest
2 teaspoons lemon juice
Salt & Pepper
Bring a large pot of water to a boil. Add salt and mix. Add the green beans. Get a large bowl of ice water ready.
Cook the green beans for about 4 minutes — until still crisp but soft in the middle.
Transfer the blanched green beans into the bowl of ice water.
Melt the butter in a skillet. Add the almonds and toast for about 2 minutes. Work on medium heat and stir the almonds often.
Add the onion and garlic. Cook for about one minute — until you can smell the garlic. Add the green beans and mix well. Cook for about two more minutes.
Add the lemon zest and lemon juice. Season with salt and pepper. Mix well and serve.
