When life gives you lemons, make a big batch of lemon cupcakes!! These are one of my favorite cupcake recipes, I love the fluffy, moist crumb with that lemony frosting. Each bite is perfect. They MELT IN YOUR MOUTH and just have an amazing lemon flavor I know you'll love. I decorated them two ways, with a nice traditional dollop and an easy piped butterrcream lemon weddger. What could be better than gingerbread in cupcake form? Ingredients: cupcake batter
1 stick unsalted butter
2½ cups all-purpose flour
1 cup boiling water
2 teaspoons baking soda
2 teaspoons ground ginger
1½ teaspoons cinnamon
½ teaspoon ground cloves
½ teaspoon ground nutmeg
½ teaspoon salt
2 teaspoons baking powder
⅔ cup dark-brown sugar
1 cup unsulfured molasses
1 tablespoon freshly grated ginger 2 large eggs

Dark & alluring, fragrant & moist, spiced & rich, pairs perfectly with a billowy mound of soft cream cheese frosting and strong espresso.

1¾ c unbleached flour ½ ts salt ½ ts baking powder ½ ts baking soda 2 ts pumpkin spice* 1 stick soft unsalted butter ⅓ c brown sugar ⅔ c unsulphured molasses 2 room temperature eggs ⅔ c whole buttermilk Cream Cheese Frosting 16 oz soft cream cheese 2-3 c *sifted* confectioners sugar (but it's really up to how sweet you like it) 1 ts pure vanilla ¼ ts fine salt Optional: orange zest candied ginger, chopped
