How To make Ginger Chicken Stir Fry
1/4 c Teriyaki sauce
1/4 c Water
1 lb Chicken breasts
-- (skinned and boned) - cut into 1-1/2 inch pieces 2 tb Vegetable oil
1 md Onion; cut into 8 wedges
16 oz Broccoli/cauliflower/carrots
- (frozen packaged mixture)* 1/2 ts Ground ginger
1/3 c White wine OR chicken broth
1 tb Cornstarch
1 tb Water
3 c Hot cooked brown rice
In shallow baking dish, combine teriyaki sauce and water; add chicken pieces, coating well. Cover and refrigerate two hours. Drain marinade from chicken pieces. In large skillet or wok, heat oil; stir-fry chicken and onion until chicken is slightly browned. Stir in vegetables, ginger, and wine. Cover; simmer 4 to 5 minutes, or until vegetables are tender crisp. In small bowl, combine cornstarch and water until smooth. Gradually add to skillet, stirring constantly, until thickened. Serve over hot rice. *Or use 1 package (16 ounces) frozen vegetable mixture of your choice. GINGER CHICKEN STIR FRY RECIPE | EASY GINGER CHICKEN | VELVET CHICKEN
INGREDIENTS:
1 large boneless double chicken breast cut into thin slices
4-5 tbsp. cornstarch
2 egg white
1/4 tsp. salt and white pepper
*Mix above ingredients and let set for 10 minutes.
Bring pot of water up to almost a boil. Add chicken pieces.
They will fall to bottom. Gently stir occassionally.
Will take 2-3 minutes to cook depending on size. Chicken will float to top
when done.
Cook the chicken in 2-3 batches so not to overcrowd the pan.
Sauce:
2 Tbsp. soy sauce
1 Tbsp. oyster sauce
1 Tbsp. Hoison sauce
1/4 cup water
1 Tbsp. Chinese cooking wine or rice vinegar
1 Tbsp. honey or brown sugar
1/4 tsp. sesame oil
*Mix well
1 carrot - julienne
1 stalk celery - julienne
3 green onions - green and white separated - julienne
2 thumbs or Tbsp. of julienne ginger
3-4 cloves minced garlic
In wok/pan on medium heat add oil to coat bottom and sides.
Add carrots, celery and white onions.
Cook and stir for 2-3 minutes.
Add ginger and minced garlic. Cook and stir for another minute.
Add cooked chicken and pour over sauce.
Cook and stir for 1-2 minutes or until chicken is heated through and
everything coated in sauce.
Add greens of onions. Give one final toss.
Serve and enjoy.

Ingredients A
500g chicken thighs
1/2 tsp salt
1 tbsp ginger juice
1/2 tsp sesame oil
2 tsp cornstarch
1 tbsp vegetable oil
Ingredients B
1 small carrot, cut into baton
1 cup broccoli florets
3 Chinese mushrooms, soaked and quartered
1 capsicum, cut into strips
Ingredients C
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp honey (optional)
2 tsp light soy sauce
1/4 tsp white pepper
2 tsp oyster sauce
1/4 cup of water
Method
Marinate the chicken
- To make ginger juice, just grate it with a ginger grater and squeeze it out.
- Marinate the chicken pieces with all the ingredients in A for an hour or more to enable them to absorb the flavors fully.
Prepare other ingredients
- Cut the carrot into batons, the broccoli into small florets, and the bell pepper into one-inch pieces. - Additionally, soak some dried Chinese mushrooms until they become soft, then cut into slices.
Make an easy stir-fry sauce
- Combine all the ingredients C except the garlic and ginger.
Stir-fry
- Transfer the chicken pieces to the pan with heated oil. Arrange them in a single layer so that it sears on both sides. Once the color has changed, set aside.
- Heating vegetable oil in a wok over low heat to sauté the minced garlic and grated ginger.
- When the aromatic turn fragrant, add the carrots and broccoli to stir-fry for a few minutes, then add a few tablespoons of water, which help them cook until crisp-tender.
- Add the mushrooms and the bell pepper last as it cooks quickly.
- Return the chicken meat to the wok and combine it with the vegetables.
- Stir-fry over medium-high heat for about a minute to create the wok aroma before dishing out to serve.

- Boneless Chicken - 1 lb or 450 gms (cut into bite sized pieces)
Seasoning for the Chicken:
- Salt- 1/2 tsp
- White Pepper Powder- 1/2 tsp
- Dark Soy Sauce- 1/2 tsp
Vegetables:
- Broccoli florets- 2 US cup measure (100 gms)
- Carrots, sliced- 1 US cup measure (90 gms)
- Red Bell Pepper- 1 US cup measure (90 gms)
- Yellow Bell Pepper- 1 US cup measure (90 gms)
- Garlic, chopped- 2 tsp (around 4 cloves)
- Ginger, chopped- 1.5 tsp
Stir Fry Sauces:
- Chicken Stock- 1/4 cup (can use readymade low sodium chicken broth/stock too)
- Dark Soy Sauce- 2.5 tsp
- Red Chilli Sauce- 3 tsp
- Honey- 1 tbsp
- Corn slurry- 2 tsp corn flour/starch (Mixed in 1 tbsp water)
- Sesame Oil- 2 tsp
Other Ingredients:
- Oil- 2-3 tbsp
- Salt- to season
- Pepper Powder- 1/4 tsp
Preparation:
Cut the boneless chicken into bite sized pieces.
Take out the broccoli florets, cut the carrots into slices and the red & yellow peppers into cubes.
Also peel and chop the garlic and ginger.
Process:
- Heat oil in a wok and add the chicken pieces. Give a stir for 30 secs and then add salt & white pepper powder to season the chicken.
- Now stir fry on high heat for around 2-3 mins and then add 1/2 tsp Dark Soy Sauce. Give a mix and continue to stir fry on high heat for another 2-3 mins till the water has completely dried up and the chicken is fried and browned.
- Remove and set aside on a plate.
- In the same oil, add the chopped garlic & ginger. Give a stir for 15 secs and then add the sliced carrots and cubed red & yellow peppers. Mix and stir fry on high heat for 1 minute before adding the broccoli florets. Also add salt to season (a pinch) and 1/4 tsp pepper powder. Give a mix and continue to stir fry on high heat for 2 mins.
- Now add the sautéed chicken pieces and give a mix on high heat for 1 minute.
- Add the Dark Soy Sauce, Chicken broth, Red Chilli Sauce and honey. Give a mix and stir fry on high heat for around 2 mins till the sauce has nearly dried up.
- Now add the corn slurry and the sesame oil, give a mix and continue to stir fry on high heat for 1 min till all the sauce has dried up and coats the chicken and vegetables.
