ADRAK/GINGER CHICKEN
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2-4
Ingredients
For Chicken Marination
500 gm Chicken (thigh boneless) चिकन
Salt to taste, नमक स्वादअनुसार
½ inch Ginger (peeled & roughly sliced) अदरक
1 no. Green chilli, diagonally sliced, हरी मिर्च
1 tsp Lemon juice, नींबू का रस
½ tbsp Ginger garlic paste, अदरक लहसुन का पेस्ट
1 tbsp Oil, तेल
For Ginger Chicken
1 tbsp Ghee, घी
1 tbsp Oil, तेल
1 no. Mace, जावित्री
3 no. Green cardamom, हरी इलायची
2 medium Onion, sliced, प्याज
1 inch Ginger (peeled & finely chopped) अदरक
Salt to taste, नमक स्वादअनुसार
2 tbsp Coriander powder, धनिया पाउडर
½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
1 ½ cups Curd, beaten, दही
Marinated Chicken, मैरीनेटेड चिकन
1 tbsp Honey, शहद
½ inch Ginger (peeled & julienned) अदरक
½ tbsp fresh Mint leaves, chopped, पुदीना पत्ता
1 tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
1 tsp Ghee, घी
For Garnish
Ginger, julienned, अदरक
Coriander sprig, धनिया पत्ता
Process
For Chicken Marination
In a bowl, add chicken, salt to taste, ginger, green chili, lemon juice, ginger garlic paste, oil and mix it well.
Keep it aside to marinate for 10-15 minutes.
For Ginger Chicken
In a handi or sauce pot, add ghee, oil, once it's hot, add mace, green cardamom, onions and saute it for a while until golden in color.
Add ginger, salt to taste, coriander powder, degi red chili powder, turmeric powder and cook for a minute.
Add curd and saute it well.
Add marinated chicken and cook it for 15-20 minutes on medium flames.
Finish it with some honey, ginger, fresh mint leaves, black peppercorns, ghee and mix it well.
Transfer it to a serving dish, garnish it with ginger and coriander sprig.
Serve hot with tandoori roti or naan.

Ingredients:
-Tamatar (Tomatoes) 3 medium
-Lehsan paste (Garlic paste) 1 tbs
-Hari mirch (Green chilli) crushed 1 tbs
-Lemon juice 2 & ½ tbs
-Namak (Salt) 1 tsp or to taste
-Chicken mix boti 800g
-Adrak (Ginger) julienne 2-inch piece
-Cooking oil 1/3 Cup
-Pyaz (Onion) chopped 1 large
-Dhania powder (Coriander powder) 1 tbs
-Kashmiri lal mirch (Kashmiri Red chilli) powder 1 tsp
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Lal mirch (Red chilli) crushed 1 tbs
-Chaat masala 1 tsp
-Tomato ketchup 2 tbs
-Dahi (Yogurt) whisked ½ Cup
-Namak (Salt) ½ tsp or to taste
-Water ½ Cup
-Adrak (Ginger) julienne 1 inch piece
-Hari mirch (Green chillies) sliced 2
-Hari mirch (Green chilli) sliced
-Adrak (Ginger) julienne
Directions:
-In a blender jug,add tomatoes & blend to make a puree (approx. 1 Cup) & set aside.
-In a bowl,add garlic paste,green chilli,lemon juice,salt and mix well.
-Add chicken & mix well.
-Add ginger & mix well,cover & marinate for 30 minutes.
-In a wok,add cooking oil,marinated chicken and fry on medium flame from all sides until golden brown (6-8 minutes),take out in a bowl & set aside.
-In the same wok,add onion and sauté until translucent.
-Add pureed tomatoes,coriander powder,Kashmiri red chilli powder,cumin seeds,red chilli crushed, chaat masala,mix well & cook until oil separates (3-4 minutes).
-Add tomato ketchup & mix well.
-Add yogurt,salt & mix well.
-Add water & mix well.
-Add fried chicken & mix well,cover & cook on low flame for 15-20 minutes then cook on high flame until oil separates.
-Add ginger & green chillies.
-Garnish with green chilli,ginger & serve with chapati!

-Karahi mein cooking oil aur marinated chicken dal dein aur darmiyani ancch per tamam sides sa golden brown ho janay tak fry ker lein,bowl mein nikal lein & side per rakh dein.
-Us he karahi mein pyaz dal dein aur translucent hunay tak sauté ker lein.
-Pureed tamatar,dhania powder,Kashmiri lal mirch powder,zeera,lal mirch crushed & chaat masala dal ker ache tarhan mix karein aur oil alag ho janay tak paka lein (3-4 minutes).
