ADRAK/GINGER CHICKEN
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2-4
Ingredients
For Chicken Marination
500 gm Chicken (thigh boneless) चिकन
Salt to taste, नमक स्वादअनुसार
½ inch Ginger (peeled & roughly sliced) अदरक
1 no. Green chilli, diagonally sliced, हरी मिर्च
1 tsp Lemon juice, नींबू का रस
½ tbsp Ginger garlic paste, अदरक लहसुन का पेस्ट
1 tbsp Oil, तेल
For Ginger Chicken
1 tbsp Ghee, घी
1 tbsp Oil, तेल
1 no. Mace, जावित्री
3 no. Green cardamom, हरी इलायची
2 medium Onion, sliced, प्याज
1 inch Ginger (peeled & finely chopped) अदरक
Salt to taste, नमक स्वादअनुसार
2 tbsp Coriander powder, धनिया पाउडर
½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
1 ½ cups Curd, beaten, दही
Marinated Chicken, मैरीनेटेड चिकन
1 tbsp Honey, शहद
½ inch Ginger (peeled & julienned) अदरक
½ tbsp fresh Mint leaves, chopped, पुदीना पत्ता
1 tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
1 tsp Ghee, घी
For Garnish
Ginger, julienned, अदरक
Coriander sprig, धनिया पत्ता
Process
For Chicken Marination
In a bowl, add chicken, salt to taste, ginger, green chili, lemon juice, ginger garlic paste, oil and mix it well.
Keep it aside to marinate for 10-15 minutes.
For Ginger Chicken
In a handi or sauce pot, add ghee, oil, once it's hot, add mace, green cardamom, onions and saute it for a while until golden in color.
Add ginger, salt to taste, coriander powder, degi red chili powder, turmeric powder and cook for a minute.
Add curd and saute it well.
Add marinated chicken and cook it for 15-20 minutes on medium flames.
Finish it with some honey, ginger, fresh mint leaves, black peppercorns, ghee and mix it well.
Transfer it to a serving dish, garnish it with ginger and coriander sprig.
Serve hot with tandoori roti or naan.

Today in our village, we cook ginger chicken recipe by using 500 chicken legs and a huge amount of ginger. We first cut and fried the ginger separately. Then, we marinate the chicken in curd and lemon juice. Finally, we cook them all together.

Ginger Chicken
Recipe in English:
Ingredients:
- Chicken ½ Kg
- Adrak Paste (Ginger Paste) 1 & ½ Tbs
- Lehsan Paste (Garlic Paste) 1 Tsp
- Oil 3 Tbs
- Pyaz (Onion) Chopped Large 1
- Tamatar (Tomatoes) 3
- Namak (Salt) 1 Tsp or To Taste
- Lal Mirch Powder (Red Chili Powder) ½ Tsp or To Taste
- Kali Mirch Powder (Black Pepper Powder) ½ Tsp
- Dahi (Yogurt) ¼ Cup
- Hari Mirch (Green Chilies) Chopped 2
- Adrak (Ginger) Julienne 1 Inch
- Garam Masala Powder (Whole Spice Powder) ½ Tsp
Directions:
- In a bowl add chicken, ginger paste and garlic paste. Apply ginger garlic on chicken well and marinate for 1 hour.
- Heat oil in a pot and add marinated chicken and fry until it changes its color to light golden and its half done. Take out chicken and set aside.
- In same oil, add onion, sauté until translucent then add tomatoes. Cook for 2 mintes and add spices and mix well .Fry until tomatoes are soft. Add chicken and give it a good mix.
- Add yogurt and mix on a high flame until water dries. Add green chilies and ginger and simmer for 2 minutes. Sprinkle whole spice powder, ginger julienne and green chilies and serve.

-Bowl mein chicken,adrak paste aur kehsan paste dal ker ache tarhan mix karein aur 1 hour kliya marinate ker lein.
-Pot mein oil garam karein aur marinated chicken dal ker itna fry ker lein k chicken ka rang tabdeel ho jaye aur adhe gul jaye.Chicken ko nikla ker side per rakh dein.
-Ab is he oil mein pyaz dal ker saute ker lein, tamatar shamil ker k 2minute kliya paka lein aur tamam masalay dal ker mix karein.Chicken shamil ker k ache tarhan mix ker lein.
-Dahi shamil karein aur tez ancch per itna paka lein k tamam pani sukh jaye.Hari mirchein aur adrak dal ker 2minute kliya paka lein.Garama masala powder,adrak julienne aur hari mirchein dalein aur serve karein.
