How To make Chinese Chicken Stir Fry
4 Chicken breast fillets
-(approximately 4 oz. each), -skinned, all visible fat -removed 1 1/3 c Homemade Chicken Broth or
-commercial low-sodium -variety 3 tb Cornstarch
3 tb Sherry
2 tb Light soy sauce
1 tb Rice vinegar
1 tb Hot pepper oil
1 tb Grated fresh ginger
3 Cloves garlic, minced
1 tb Sesame oil
1 8-oz package fresh
-mushrooms, sliced 1 c Diced red bell pepper
3/4 c Sliced green onion
1/3 c Unsalted dry-rosted pecan
-halves Rinse chicken and pat dry. Cut into 1-inch cubes. Set aside. In a small bowl, combine broth, cornstarch, sherry, soy sauce, and vinegar. Set aside. Heat hot pepper oil in a nonstick skillet or wok over high heat. Add ginger and garlic and saute 1 minute. Add chicken and stir-fry until lightly browned. Transfer chicken to plate and set-aside. Add sesame oil to skillet. Stir in mushrooms and pepper. Cover pan, reduce heat, and steam 5-7 minutes. Add chicken broth mixture. Return chicken to pan and cook until sauce is thickened. Add onions and pecans and cook 2 minutes more. Serve over rice if desired. Easy & Healthy Chinese Chicken & Broccoli Stir Fry ~ Chinese Wok Recipe
INGREDIENTS
1 large sliced chicken breast
2 cups broccoli florets
1 sliced carrot
oil
water
slurry - equal water and starch
Chicken marinade:
2 tbsp. soy sauce
2 tsp. rice wine
1 large egg white
1 1/2 tbsp. cornstarch
Sauce:
1/2 to 3/4 cup chicken broth
2 tbsp. oyster sauce
2 tsp. dark soy sauce
3 cloves minced garlic
1 -2 tsp. minced ginger
white pepper
drizzle sesame oil
Prepare all ingredients before cooking.
Mix chicken, soy sauce, rice wine, egg white and cornstarch. Cover and refrigerate for 30 minutes.
Mix all ingredients for sauce and whisk well.
Blanch broccoli florets and carrots.
When water comes up to a light boil add chicken and give one or two pushes so not to stick together. Blanch for about 2 minutes and remove.
Clean wok and add sauce. Bring up to a simmer for one minute.
Add chicken, broccoli, carrots and slurry.
Stir until thickened and all chicken and veggies coated.
Remove from heat immediately.
Serving with rice. Enjoy.

Ingredients for Teriyaki Chicken Stir Fry:
Boneless Chicken Thigh - 450 gms (1 lb)
(Tsp-Teaspoon; Tbsp-Tablespoon) US Measures
For the Teriyaki Sauce:
- Light Soy Sauce- 3 tbsp (Preferably Kikkoman)
- Brown Sugar- 3 tbsp
- Apple Cider Vinegar- 1 tsp
- Sesame oil- 1 tbsp
- Ginger grated- 1 tsp
- Garlic grated- 1 tsp
Other Ingredients:
- Salt for seasoning- 1/4 tsp
- Pepper powder for seasoning- 1/4 tsp
- Oil for pan frying the chicken- 1.5 tbsp
- Sesame seeds- 1 tsp (as garnish)
- Spring onion greens, chopped- 2 tbsp (as garnish)
Preparation:
- Cut the boneless thighs into bite sized chunks.
- Grate the ginger & garlic and prepare the Teriyaki Sauce.
Process:
- Heat oil in a pan and then add the chicken pieces. Season with salt and pepper powder.
- Fry on high heat for 5-6 mins till the water dries up and the meat is browned.
- Now add the Teriyaki Sauce (prepared earlier), give a mix and cook on medium heat for 3-4 mins till the sauce is absorbed and coats the chicken pieces.
- Garnish with the sesame seeds and chopped spring onion greens.
