Thai Cashew Chicken Stir Fry
Cashews are a favourite in stir fries all across Asia, and the Thai do it best! Really try to use raw cashews if you can, pan roasting them brings out super flavour. But if you only have roasted cashews, that's fine too!
Use as much chilli as you want… or not. Terrific whether it's spicy or mild!

INGREDIENTS: * 8 chicken skinned, deboned, chicken with fat trimmed, and cut into bite size pieces
* 2 bell peppers cut into bite size pieces
* 1 large onion
* 3 cloves of garlic minced
* 1 thumb size ginger minced
* 2 tbsp oil (1/3 for marinade, 1/3 for stir frying of chicken, 1/3 for stir frying vegetables) add more oil as desired
* 1 tsp of honey
* 1 chicken bouillon cube
* 1/4 of crushed black pepper for marinade, and a pinch for stir frying vegetables
* 2/3 cup of chicken broth
* 1 tsp of dark soy sauce
* 1 heaping tbsp of corn starch (1/2 for marinade, 1/2 for slurry)
Marinate meat for 10-15 minutes prior to cooking. Place skillet on medium heat, add oil, wait till oil is sizzling hot and place marinated chicken in batches, spread out in wok, and cook for 2 minutes on each side, to obtain a sear/caramelization. Transfer cooked chicken to a bowl to stop cooking. Repeat this process till all chicken is cooked.
Proceed with cooking vegetables in same wok by adding remaining oil to wok on high heat. Add remaining garlic and ginger, crushed black pepper, bouillon, and salt, stir and cook for under 30 seconds. Add vegetables and cook to your preferred crunch/done-ess. I cooked the vegetables not exceeding 1 minute. Add slurry (combination of chicken broth, and corn starch), stir till thickened. Add cooked chicken, and stir to combine. Remove wok from heat and serve with rice. Enjoy ????

INGREDIENTS
½ kilo chicken
1 sliced onion
2 bell peppers (chopped)
4 cloves of garlic (minced)
1 thumb ginger (sliced)
4 chili peppers (sliced)
2 teaspoon paprika powder
1 teaspoon garlic powder
1 teaspoon white pepper
⅓ cup sweet style banana ketchup
Hot sauce (to taste)
2 tablespoons soy sauce
1 sachet oyster sauce
1 tablespoon apple cider vinegar
Brown sugar to taste
1 tablespoon cornstarch
1 teaspoon sesame oil
Salt and pepper to taste
DIRECTIONS
Wash and prepare the chicken and place them in a bowl. Add the paprika powder, white pepper, garlic powder, salt, and cornstarch. Mix until well combined. Set aside.
In a small bowl, combine the soy sauce, ketchup, oyster sauce, hot sauce, apple cider vinegar, brown sugar, cornstarch, and sesame oil. Gently stir until well combined and no lumps. Set aside.
Heat enough oil in a pan. Add the chicken pieces and then cook using medium fire for a few minutes until slightly browned. Remove the cooked chicken from the pan and transfer them to another container.
In the same pan, add the onions, ginger, and garlic then saute them for a few minutes until light brown and aromatic. Add some chili peppers based on how spicy you like them. Add the bell peppers and saute for a few minutes (do not overcook).
Add the cooked chicken back to the pan and toss gently until well mixed.
Pour the sauce made earlier. Stir well until the sauce coats all the ingredients. Season with salt and pepper. Add a bunch of spring onions and toss again.
Transfer the chicken stir fry to a serving plate. Serve with newly steamed rice. Enjoy!
Easy Pan-fried Chicken! | Easy Homecooking
Learning how to make simple, easy, and healthy meals at home is a valuable skill!
I'm always on the run, so learning how to do that was important to me. I thought I'd share some clips on how I eat!
Just to be clear, you don't have to only eat chicken and rice to be healthy and fit. I make this because I love it and it can cook while I work around the house. There will be some heavier, creamier dishes later!
If you're worried about salmonella from rinsing your chicken, just wash your sink. My reasoning is that I don't know what touched the chicken before it was packaged. Yes you can kill bacteria and germs with heat, but there can also be various chemical, debris, and others. Plus, we should regularly clean our sink anyway. If you don't want to rinse, you don't have to!
I am not a professional chef nor do I claim to an amazing cook. Check out my buddy ThatDudeCanCook for more on how to DINE.
