How To make Frittata Ranchera
3 T Butter or margarine, melted
1/2 c Chopped onion
1/2 c Chopped green bell pepper
3/4 c Cubed cooked ham
2 c 15 oz ranch style beans
8 Eggs
2 T Water
Saute onion and green pepper in 1 tablespoon butter; stir in ham and beans. Heat to warm; remove from sillet. Meanwhile, beat together eggs and water. Heat remaining butter in skillet until just hot enough to sizzle; add eggs. Cook over low heat until eggs are set. Pour heated bean mixture evenly over eggs; cover tightly. Cook until eggs reach desired doneness. Cut into wedges to serve. Serves 4-6

House skillet potatoes ingredients
2 to 3 large russet potatoes
1/2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin
1 tsp black pepper
1 tsp salt
1 tsp Mexican oregano

Torta de Huevo Recipe (Egg Fritters in Red Chile Sauce) | Vegetarian Lent Dish: By Letitia Montoya
Torta de huevo are small patties made from beaten egg whites mixed with the whipped yolks (and a few other things). They are fried quickly in hot oil and served on a floating river of rich red chile sauce. This is a traditional in my family to eat on Lent every year in my home town of Santa Fe, New Mexico.
This dish is very popular because red chile is always available, dried in ristras every year from fresh crops of chile. The chickens were laying eggs in plentiful numbers in the spring. Eggs our used in place of meat during Lent because on certain days the church prohibited eating meat. Torta de Huevo is excellent served with beans and tortillas.
Lent is a period of fasting, repentance, and spiritual discipline in the Christian faith, and many people observe Lent by abstaining from certain foods or by following a specific dietary regimen. Depending on the individual's tradition and practices, this may involve abstaining from meat, dairy, eggs, or other animal products on certain days of the week or throughout the entire Lenten season

Egg Recipe for the Torta de Huevo
Ingredients:
3 eggs
1/4 tsp. salt
1/4 tsp. pepper to your taste
1/4 tsp. garlic to your taste
1 tbsp. flour to your taste
1/4 cup oil of your choice
1. Separate eggs.
2. Beat egg yolks and add spices.
3. Beat egg whites until stiff.
4. Now sift flour into mixture and beat gentle.
5. Fold in egg yolks.
6. Heat stove top to medium heat.
7. Drop Mixture by tablespoons into oil and lightly brown on both sides.
8. Drain on paper towels, and add them to the red chile.
