3/4 lb Walnuts; ground finely
4 lg Eggs; separated
1/2 lb Sugar

Garnish: Powdered sugar Cocoa Fresh berries Beat the egg yolks and sugar together until light and fluffy, about 4 minutes with an electric mixer. Stir in lemon zest. In a separate bowl, beat egg whites until stiff. Fold a quarter of the whites into the egg mixture to loosen it. Stir walnuts into mixture until thoroughly blended, Fold in remaining egg whites carefully to maintain light texture. Pour batter into a lightly buttered and floured 8-inch cake pan and bake in a preheated 375 degree oven for 55-60 minutes or until firm and golden brown, Cool cake on a rack before turning out and then alternately dust with Powdered sugar and cocoa. cake (4 generous servings.) Note: This is a very simple recipe that depends entirely on the quality of the walnuts. If you suspect your walnuts have been In storage for a while, place them on a baking sheet in a preheated 375 degree oven and lightly bake for 3 to 4 minutes to 'refresh' their flavor. Flourless Chocolate Walnut Cake with Coffee Mousse
Flourless Chocolate Walnut Cake with Coffee Mousse is a cold and creamy, best for spring or summer time. It is also light without flour, thus that makes gluten-free. Light cake with soft and airy coffee mousse on the top, is such a delectable cake. One of my favourites dessert of all time. Hope you will give it a try. Enjoy!
Ingredients:
7 inch springform pan (with a removable base)
Flourless Chocolate & Walnut Cake
110g (1/2 cup) unsalted butter
150g (1 ¼ cup) semisweet chocolate
3 eggs (separate egg yolk and white)
80g (1/3 cup) sugar
8g (1 tbsp) unsweetened cocoa powder
¼ tsp salt
½ cup walnut (chopped)
Coffee Mousse
2 egg yolks
80g (1/3 cup) sugar
12g (1 1/2 tbsp) cornstarch
160ml (2/3 cup) warm milk
1/2 tsp vanilla extract
1 tbsp instant coffee
5g (1/2 tbsp) gelatin powder
2 tbsp cold water
240g (1 cup) whipping cream, 35% fat, chilled
Unsweetened cocoa powder for dusting the top
¼ cup chopped walnut to garnish
Instructions:
1. Preheat oven to 180°C / 350°F. Grease and line a 8-inch (20 cm) springform pan (with a removable base) with parchment paper. Chop the roasted walnut.
2. Melt the chocolate and butter over a boiling water. Set aside to cool.
3. Separate egg yolks from whites. Add one egg yolk, cocoa powder and salt into the melted chocolate mixture. Mix until well combined.
4. Whip egg whites until foamy using a mixer. Gradually add sugar and whip until stiff peaks form. Gently fold the whipped whites into chocolate mixture. Add the chopped walnut. Pour batter into prepared pan and bake for 25 minutes. Let it cool completely while preparing the coffee mousse.
5. Prepare the coffee mousse. Stir egg yolks with sugar until creamy and pale yellow colored. Stir in cornstarch. Gradually whisk in the warm milk until completely combined.
6. Place the yolks mixture into a small saucepan and cook over low heat while stirring until boiled and thickened.
7. Remove from heat and stir in vanilla extract and instant coffee. Let it cool.
8. Dissolve gelatin in 2 tbsp cold water and let it sit for about 5 to 10 minutes. Place over low heat just until the gelatin dissolves and then pour it over coffee mixture.
9. Whip the cold whipping cream until stiff peaks form. Gradually incorporate into coffee mixture.
10. Spread the coffee mousse over the chocolate cake in the pan, using an offset spatula.
11. Cover and refrigerate for about 4 hrs or overnight to set before serving.
12. Run a knife around the edges of the cake to remove the sides of the pan.
13. Do a little cake hack as shown in the video. That is to top the cake with walnut and cocoa powder dusting. (optional)
14. Cut the cake into slices and serve.

British Coffee & Walnut Cake Recipe | Rich Coffee Flavour & Buttercream Filling #britishcoffeecake
This classic cake has remained on the menus in tea and coffee shops in Britain for many years, and has been made famous everywhere else since being featured on the Great British Bake Off.
There are three steps to this cake:
1. Baking the sponges
2. Making the buttercream
3. Assembly
INGREDIENTS
CAKE:
6oz / 1½ stick salted butter (room temperature)
1 cup light brown sugar
3 large eggs (room temperature)
Cooled coffee (1 tablespoon coffee & 2 tablespoons water)
1½ cups self raising flour
1 teaspoon baking powder
¾ cup chopped walnuts
6-8 walnut halves for decorating
FROSTING:
4 oz / 1 stick salted butter (room temperature)
1¼ cup powdered sugar
Cooled coffee (1 tablespoon coffee & 2 tablespoons water)
DIRECTIONS
1. Preheat oven to 350°F / 180°C. Grease and line two round diameter baking tins (an 8 inch tin is recommended for the right thickness of cake)
2. Beat butter and sugar together until light and fluffy. Then beat in the eggs and coffee small amounts at a time.
3. Sift in the flour and baking powder, blend together. Then using a spatula, fold in the chopped walnuts.
4. Divide the mixture between the two baking tins, smooth over the surface.
5. Bake for approximately 20-25 minutes. Remove from the oven and place onto a wire cooling rack.
6. Prepare the frosting as the cakes are cooling. Beat the butter until it is soft, then add in the sugar. Beat, add coffee and continue beating until light and fluffy.
7. Spread the frosting evenly on top of one cake. Place the other cake on top of the frosted cake to form a sandwich. Smooth the remaining frosting over the top of the cake. Use the walnut halves to decorate the top.
This cake will keep fresh for 2-3 days if kept in a cool place in an airtight container. The unfrosted cakes can be wrapped in cling wrap and frozen if you want to make ahead and frost in the future.
