2 tb Butter 1 c Brown sugar 1/2 c Ground California dried figs 1/2 c Ground nut meats 1/2 ts Vanilla Melt butter in heavy frying pan. Stir in brown sugar and cook until sugar is dissolved. Blend well. Add ground figs and nut meats and remove from fire. Add flavoring and drop by spoonfuls onto waxed paper. ***************************************** RECIPE DAY 154 – Butterscotch Cannoli
Serves 4-6
Ingredients:
10 Large Cannoli Shells 1 8oz (250 g) Package of Philly Cream Cheese – at room temperature *4 3.5oz (400 g in total) Butterscotch Pudding Cups ½ cup (80 g) Powdered Sugar ½ cup (70 g) Butterscotch Chips ½ cup (70 g) Toffee Bits ½ tsp (1 g) Ground Cinnamon ½ tsp (1 g) Vanilla Extract
* for homemade butterscotch pudding:
2 cups (480 ml) Fat-Free Milk ½ cup (100 g) Brown Sugar 2 Egg Yolks [lightly beaten] 2 Tbsp plus 2 tsp (27 g in total) Cornstarch 1 Tbsp (15 g) Unsalted Butter 1 ½ tsp (3 g) Vanilla Extract 1/8 tsp (0.8 g) Salt
1) Add brown sugar, cornstarch and salt to a small sauce pan and mix to combine. Add in the milk and egg yolks and whisk until smooth.
2) Bring the mixture to a boil over medium heat stirring constantly. Once boiling, cook for 2 more minutes or until thickened, stirring constantly.
3) Remove from the heat, add in the butter and vanilla extract and mix to combine. Let it cool down to room temperature, mixing it a few times. Cover with some plastic wrap, and put to the fridge for 1 hour to cool down and set.
NOTE: if you are using smaller narrower shells, the best way to fill them out is with an actual syringe (the bigger the better)!
Process:
1) In a large bowl cream together the cream cheese, butterscotch pudding, powdered sugar, vanilla extract and cinnamon. Add the butterscotch chips and toffee bits (leave some for decorating in the end, if you choose to do so) and mix to combine.
2) Using a disposable piping bag fitted with a large round tip (large enough so that the butterscotch chips can get through) pipe the filling into the cannoli shells.
3) Once they are all filled sprinkle some toffee bits over each end of the cannoli and enjoy!

Apricot Almond Butterscotch Cookies
Apricot Almond Butterscotch Cookies Ingredients 7 Tablespoons Butter, Softened ⅓ cups Brown Sugar ⅓ cups Sugar 1 Egg ½ teaspoons Almond Extract 1-½ cup All-purpose Flour ½ teaspoons Baking Soda ½ teaspoons Salt 1 cup Dried Apricots, Chopped ¾ cups Slivered Almonds ½ cups Butterscotch Chips Preparation Instructions Preheat oven to 375 F. Prepare two cookie sheet pans by lining them with a Silpat mat or parchment paper.
In the bowl of your stand mixer add butter, brown sugar and white sugar. Mix until creamy. Add egg and mix until creamy. Add almond extract and continue to mix.
In a separate bowl combine flour, baking soda and salt. Add flour mixture into the mixing bowl and continue to mix. Stir in apricots, almonds and butterscotch chips.
Using two tablespoons scoop out mixture and drop onto cookie sheets spacing cookies about 2 inches apart. Bake for 9 to 11 minutes or until golden brown. Remove from oven, allow them to cool and enjoy!
