We think this is the best Texas chili recipe and the internet seems to agree. In this recipe, we use the flat of a brisket for creating tender morsels of chili meat that doesn't come out tasting like pot roast.
This recipe is in the style of Texas barbecue restaurants and is a chili recipe with no beans.
It's a bit like a chile con carne recipe, but we slowly simmer these chunks of beef until they are one solid soup. In fact, you might find that using an immersion blender after the chili cooking gives you even more of a Texas quality chili. Just buzz it a few times to make it extra broken up and mixed well. :)
Ingredients Used:
• 4 slices thick cut bacon
• 3-4 lb. beef brisket, trimmed
• Kosher salt, pepper, onion powder – for liberally sprinkling on the meat while browning.
• 2 c. white onion, small diced (one large onion)
• 5 garlic cloves, pressed through a garlic press
• 1 T paprika
• 1 T. cumin powder
• 3 ½ T Texas chili powder, such as Mexene or Gebhardt’s
• ½ t. dried thyme
• ½ t. chipotle chile powder
• ½ t. salt
• 1 quart beef broth
• ½ c. strong black coffee (you can save this from your morning coffee)
• 28 oz. can whole tomatoes, in juice

Award Winning Chili Recipe Ingredients
5 slices thick sliced, hardwood hickory smoked bacon
1 red bell pepper, chopped
1 green bell pepper, chopped
3 stalks celery, chopped
1 small yellow onion, diced
½ - 1 jalapeno pepper, seeded and diced
1 10.5 oz can beef consomme (you can also use beef stock)
1 6 oz can tomato paste
1 tablespoon Worcestershire sauce
2 15 oz. cans diced tomatoes, undrained
1 15 oz. can pinto beans in mild or medium sauce (also called Chili Beans)
1 15 oz. can kidney beans in mild chili sauce
2 pounds ground beef
Crockpot Chili Ingredients - Spices
4 tablespoons chili powder
1 tablespoon dried oregano
1 tablespoon white sugar
2 teaspoons cumin
1 teaspoon smoked paprika
3 teaspoons garlic powder
1 teaspoon basil
1 teaspoon Lawry’s seasoned salt
½ teaspoon ground pepper
½ teaspoon cayenne pepper
Award Winning Chili Recipe Directions
Prepare the vegetables for the recipe first. Roughly chop the red and green peppers and celery. Seed the jalapeno pepper(s), removing the seeds and membrane, then finely dice. Use more jalapeno for a spicier chili. Peel and dice one small yellow onion.
Cook the bacon in a large cast iron skillet, until the bacon is lightly crisp but not overdone. Remove the bacon and drain on a paper towel lined plate.
Saute the vegetables in the bacon grease for about 5 minutes, until tender. Remove the vegetables from the skillet, draining as much bacon grease from the vegetables as you can. Cook the ground beef in the skillet with the bacon grease. Cook the beef one pound at a time so the meat has enough room to brown and not steam. Break the ground beef into pieces about 1 - 2 inches. When cooked through, remove from the skillet and repeat with remaining meat.
Measure all of the spices into a small bowl, and mix together.
Now it’s time to assemble all of the ingredients into the slow cooker. Mix the beef consomme or beef stock in the crockpot with the tomato paste. Add the Worcestershire sauce and spice mixture, and stir to blend. Taste the mixture and adjust spices as you like. Add the cans of tomatoes and beans, all undrained. Add the beef and sauteed vegetables. Chop or cut the bacon into about ½ inch pieces and add to the crockpot chili mixture. Cover and cook on low for about six hours. I love that this is a crockpot chili recipe! It’s so easy to put together in the morning and have delicious chili ready for dinner!

Cowboy Pinto Beans Recipe
1 pound dried pinto beans
1 large yellow onion, sliced
1-2 jalapeños, diced
1 ham hock (8 to 10 ounces)
1 1⁄2 tablespoons dried cilantro
½ tablespoon Red River Ranch Original Seasoning
½ tablespoon Mesquite Seasoning
1. Pour the beans into a large soup pot. Pour enough water over the beans until they are covered by about 2 - 3 inches.
2. Add the onion, jalapeño, ham hock, and cilantro. Cook over high heat until the mixture reaches a rolling boil, stirring occasionally.
3. Cover and boil hard for 30 minutes, stirring occasionally. As soon as the beans are boiling, you may need to add more warm water to keep them slightly covered and throughout the cooking process.
4. Reduce the heat to medium. Stir in the spices. Cover and simmer for 11/2 to 2 hours, stirring occasionally, until the beans soften. Season again to taste, if necessary.

Crock Pot Pinto Beans
1 lb dry pinto beans, looked, washed and soaked overnight
Rinse beans again and put in crock pot, cover with water about 2 inches over beans, season with bacon grease, oil or fat of your choice, salt & pepper. Cook 6-10 hours (all day long) on low. Turn up to high an hour before you are ready to eat to thicken the soup. Make some cornbread and enjoy!

Slow Cooker Spicy Pinto Beans {The BEST Mexican side dish}

I often make these beans instead of refried beans along with enchiladas or taco night. These beans have quite the spicy kick to them!
RECIPE:
INGREDIENTS:
1 lb. dried pinto beans no need to presoak
1 cup diced yellow onion
1-2 jalapenos sliced
2 tsp. chili powder
½ tsp. onion powder
½ tsp. garlic powder
¼ tsp. pepper
32 oz. container chicken broth
2 cups water
Add at the end:
¼ tsp. salt or more to taste.
SLOW COOKER SIZE:
5-quart or larger
INSTRUCTIONS:
Rinse and drain the beans, discard any dirt clumps or rocks. Add to the slow cooker.
Add the onion, jalapenos, chili powder, onion powder, garlic powder, pepper, chicken broth and water to the slow cooker with the beans. Wait to add the salt.
Cover and cook on HIGH 7-8 hours. Do not open the lid while they cook, or they will not get tender.
When the cooking time is done mash about 1/4 of the beans with a potato masher right in the slow cooker. Or you can put a scoop in a bowl and mash with a fork and add back to the slow cooker. This will make the beans creamy, which the slow cooker can't do since the simmer is so low. Add salt to taste, I usually use 1/4 tsp.
Serve as a side dish or as a main with tortillas or cornbread. Enjoy!
