Pumpkin Bread Recipe Toaster Oven~How to Bake Pumpkin Bread in a Cast Iron Skillet
In this easy cooking video, I bake some homemade pumpkin bread, in a cast iron skillet, in my toaster oven. The ingredients I used in this easy pumpkin bread recipe are 7 1/2 ounces of canned pumpkin, 2 eggs, 1/2 cup of vegetable oil, 1/3 cup of water, 1 1/2 cups of sugar, and 1 tablespoon of vanilla for the wet ingredients. The dry ingredients are 1 3/4 cups of all-purpose flour, 1 teaspoon baking soda, 3/4 teaspoon of salt, and 3/4 tablespoon of pumpkin pie spice. This is the easiest, most delicious bread recipe I have ever demonstrated. You will swear this bread came from a bakery!
The pumpkin gives the loaf a wonderful color and very subtle pumpkin flavor and aroma. This is perfect for your holiday table!

Preheat Oven to 175C
2 lb Loaf Tin ( but you can also use and cake tin)
315g Pumpkin Puree
2 Eggs
120ml Vegetable Oil
100g Caster Sugar
150g S0ft Light Brown Sugar
1/2 tsp Vanilla Extract
215g Plain Flour
1 tsp Bicarb
1/2 tsp Baking Powder
3/4 tsp Sea Salt
2 tsp Cinnamon
1/2 tsp Ground Ginger
1/4 tsp Nutmeg
100g Additions: Pecans, Choc Chips, Pumpkin Seeds - anything you like!

Sourdough Pumpkin Bread, you must try this easy recipe, no water added
This golden pumpkin bread is made of pure pumpkin puree. No water, no sugar, no oil, it is a very healthy staple bread.
Ingredients:
300g bread flour
100g active sourdough starter
6g salt
250g pumpkin puree (adjust based on its moisture content)
50g pumpkin seeds
*** Pumpkin puree:
mashed steamed pumpkin , same as in this video
Preheat the oven and cast iron pot to 230C/445F in advance
Cover the cast iron pot, bake at 230C/445F for 30 minutes
Remove the lid, turn to 200C/390F, and bake for another 15 minutes
