What is chicken fried steak?
If you never had or heard of chicken fried steak you're probably thinking what the heck! It's a pretty simple dish. In short, it's a tenderized steak (usually cube steak) that is coated and fried. The outside resembles fried chicken because it is coated in flour, milk, and eggs, basically the same stuff you'd use to coat fried chicken.
It's fried until golden and crispy. So you get to experience that crispy golden crust and tender delicious steak all in one bite! Now it's pretty easy to see why it's called chicken fried steak huh? And if that wasn't enough, chicken fried steak is often served with a generous drizzling of creamy white or brown gravy. Yeah, tell me about it! This delicious dish cares nothing about your waistline goals.
What to serve with chicken fried steak?
Chicken fried steak makes such a wholesome, old-fashioned meal! I like to serve it with mashed potatoes, sweet peas, yeast rolls or Texas Toast and sweet iced tea to wash it all down!

Today I am cooking at home and making crispy chicken fried steak and cream gravy. This is how I take a cheap cut of cubed steak and make a meal to feed the family. This method yields a crispy golden-brown crust and tender steak. Cubed steak usually comes from top sirloin or top round cuts of beef.

INGREDIENTS
1 1/2 lbs to 2 lbs ( 680 to 907 g ) cubed beef steak
NOTE: cubed steak can be beef top round or beef top sirloin
cooking oil for frying
*FLOUR DREDGE*
2 1/4 to 2 1/2 cups (290 to 325 g) all-purpose flour
1 1/2 tsp season all salt
1/2 tsp onion salt blend
1/2 tsp black pepper
*EGG MIX*
1 large egg
1 1/2 cups (375 ml) whole milk (or buttermilk)
1/2 tsp season salt
1/4 tsp black pepper
*CREAM GRAVY*
3 Tbsp (45 ml) cooking oil
2 1/2 to 3 Tbsp (25 g) all-purpose flour
2 to 2 1/4 cups (473 to 532 ml)
salt and pepper to taste

CHICKEN FRIED CHICKEN, BEST CRUST EVER
Easy deep fried chicken fried chicken recipe. Tenderized chicken breasts breaded in seasoned flour then deep fried until golden brown and moist. Smothered in country cream gravy over a bed of creamy mashed potatoes. I’ll also share tips on two ingredients that will help keep the breading on the chicken while frying; how to marinate it to get the most moist chicken possible; and how to fry it to get the most crispy texture. Tried and true. Enjoy!
Shopping List:
2 thinly cut chicken breasts
2 cups of whole milk or buttermilk
1 egg
1 cup of milk
1 cup of all purpose flour
1 tbls. baking powder
1 ½ tbls. corn starch
1 ½ tbls. Mesquite seasoning
1 tsp. granulated garlic
1 tbls. kosher salt
1 tsp. course black pepper
32 ounces Canola oil
Directions:
Marinade the chicken in milk or buttermilk in fridge from 60 minutes to overnight.
Using a meat tenderizer pound the chicken until they are very thin. About ¼ inch thick.
Let the chicken set out to come to room temperature.
Season the flour with the Mesquite seasoning, garlic, salt and pepper and add the baking powder and corn starch. Mix to combine.
Heat the oil in a dutch oven to 350 degrees. Add enough oil to deep fry the chicken.
Mix the egg and the cup of milk until well combined.
Dredge the chicken in the egg wash letting the excess drip off.
Then dredge it in the seasoned flour coating well.
Repeat the dredging process once more.
Carefully place the chicken in the hot oil and fry about 3-4 minutes the first side then about 2 minutes on the other until golden brown and crispy.
Place the chicken on a wire rack to drain and rest several minutes.
FOR THE GRAVY: (For 1-2 servings)
1 tbsp. butter, or some other fat (bacon grease or drippings from the chicken fried chicken grease)
1 tbsp. all purpose flour
1 12 oz. can evaporated milk or regular milk
Salt and pepper to taste
If using the grease drippings, drain all but about 1-2 tbsps. If using butter, allow the butter to melt then stir in the flour. Stir about 2 minutes until a roux forms and the raw flour taste has cooked out. Gradually add the milk while constantly stirring until thickened. Bring to a boil then reduce the heat, season with salt and pepper to taste.
Cover chicken in gravy and serve with mashed taters.

Chicken Fried Steak Recipe with Homemade Gravy
You will absolutely love this tender delicious breaded chicken fried steak recipe with homemade gravy that comes together in 30 minutes.
Chicken fried steak is thinly sliced cubed steak that is battered and fried in oil and is then served with a simple milk-based gravy. The history of this recipe is a little bit murky, but to tie things together you are essentially taking a fried chicken batter and applying it to steak.
Ingredients for this recipe:
For the Steak:
• 2 eggs
• ½ cup whole milk
• 2 dashes hot sauce
• 1 cup all-purpose flour
• ½ cup corn starch
• 1 teaspoon paprika
• 1 ½ teaspoons onion granules
• 1 ½ teaspoons garlic granules
• ½ teaspoon pepper
• 1 ½ teaspoons sea salt
• 8 cube steaks
• sea salt and pepper to taste
• 1 cup cooking oil
For the Gravy:
• 4 tablespoons unsalted butter
• 6 tablespoons all-purpose flour
• 4 cups whole milk
• sea salt and pepper to taste
Serves 8
Prep Time: 10 minutes
Cook Time: 20 minutes
Procedures:
1. Steak: In a bowl whisk together the eggs, milk, hot sauce, salt, and pepper until combined.
2. In a separate bowl whisk together the flour, corn starch, paprika, onion granules, garlic granules, pepper, and 1 ½ teaspoons of sea salt until combined.
3. Next, add 1 cube steak to the bowl with the whisked eggs and milk and completely coat.
4. Transfer the egg-washed steak to the bowl with seasoned flour and dredge to completely coat on each side. Place on a cookie sheet tray lined with parchment paper and repeat until all of the steaks have been breaded.
5. Add the breaded steak 2 or 3 at a time to a large frying pan over medium to medium-high heat, or at 350°, and cook for 1 ½ to 2 ½ minutes per side or until browned and cooked through.
6. Drain on paper towels or a cookie sheet tray with a rack. Repeat the process until all of the steaks have been cooked.
7. Gravy: In a medium-size saucepot over low heat add in the butter until melted and then whisk in the flour until completely combined.
8. Pour in the milk while constantly whisking and turn the heat to medium-high until nappe, or very thick.
9. Finish the gravy with salt and pepper and serve with the chicken fried steak.
10. Serve with optional garnishes of chopped green onions and parsley.
Chef Notes:
Make-Ahead: This recipe is meant to be eaten as soon as it is finished cooking.
How to Reheat: To reheat the steak, place it on a rack on a cookie sheet tray and bake at 350° for 4-5 minutes or until crisp and warm. If reheating the steak from the freeze, bake on a cookie sheet tray lined with parchment paper at 350° for 12-15 minutes. Heat the gravy in a small saucepot over low heat until warmed. You can also heat both of these in a microwave until warm.
How to Store: Cover and keep in the refrigerator for 3 days. This will freeze covered for up to 2 months. Go straight from the freezer to the oven when reheating.
