Recipe:
Beef Eye of Round. As much as you think you want to freeze. Generally 6-8 pounds is enough for several freezer dinners.
To process the beef slice your round into 3/4 in slices against the grain and pound it with a tenderizing mallet. Once you have pounded it down to roughly 1/2 steaks set to the side. Pour buttermilk all over your freshly pounded steaks and allow them to marinate for 3 hours to overnight in the refrigerator.
When you are ready to fry set up a fry station. It should look lie this.
1 bin with meat
1 bin with ap flour
1 bin with egg/milk mixture
1 bin with seasoned flour
1 tray to pace fresh battered steaks to rest.
The seasoned flour mixture should be seasoned to taste but I like the following mix (Be sure to mix your flour well to avoid any salt pockets):
1 pound of flour
1 Tablespoon Kosher Salt
1 Tablespoon Pepper
1 Tablespoon Onion Powder
1 Tablespoon Garlic salt
The egg/milk mixture
I like to add 6 eggs to 1 quart of milk and whisk till well incorporated.
Finally take the buttermilk steaks and dredge them in the ap flour with your right hand. Then place them in the milk mixture. With your left hand remove the steaks from the milk mixture and coat them well in the seasoned flour mix. Finally with the right hand remove the steaks from the flour and place on a sheet pan to rest for 10-15 minutes. This method will keep your hands from getting crazy messy during this process.
After the steaks have rested fry them in some oil that has been preheated to 350F. Keep your fire on a Med/High as to maintain the frying temp. If it gets too low then your steaks will not crisp up and they will be soggy. One tip would be to try and not crowd the pan.
After they have fried set on a rack to drain and enjoy for dinner. To freeze simply place in a tin and wrap tightly with foril.
To reheat, allow steaks to thaw in the fridge and in a 450F preheated oven bake them on a rack for 15-20 minutes. Serve with some country gravy and you are in business!!

Chicken fried steak and gravy is a classic, it's a stick to your ribs meal, the breading is just like fried chicken, so hearty and full of flavor then ti top it off, it's smothered in a creamy gravy. Chicken fried steak goes so well with mashed potatoes and any other side you choose and kids love too...it's quick, easy and delicious.
INGREDIENTS
2 cubed steaks (6 & 1/2 oz. each)
3/4 C.flour
3/4 tsp onion powder
3/4 tsp garlic powder
1/4 tsp cayenne pepper
1/4 tsp baking soda
1/4 tsp baking powder
3/4 tsp crushed parsley flakes
3/4 tsp paprika
3/4 tsp pepper (you decide)
1 tsp salt (you decide)
1 C. vegetable oil
EGG MIXTURE
1 beaten egg
3/4 C. buttermilk
GRAVY
2 Tbsp bacon
2 heaping Tbsp flour mixture
2 C. milk
pepper (to your liking)
salt (to your liking)
HOMEADE BUTTERMILK
Put 1 TBSP white vinegar in a cup and fill it with milk and that equals to 1 C buttermilk.
● you can fry them longer than approximately 3 minutes if you want, check to make sure they're well cooked.

Chicken Fried Steak and Gravy

Ingredients
2 pounds beef bottom round, trimmed of excess fat
2 to 2 1/2 cups all-purpose flour
2 tablespoons garlic powder
2 tablespoons onion powder
Kosher salt and freshly ground black pepper
3 whole eggs, beaten
2 cups buttermilk or whole milk
Hot sauce, to taste
Vegetable oil
3 heaping tablespoons all-purpose flour
1 cup buttermilk
1 cup whole milk
Directions
In a medium flat dish add the flour, garlic powder, onion powder, kosher salt and pepper, to taste, and combine well. In another flat dish stir together the eggs, buttermilk and hot sauce, to taste, and season well with salt and pepper, to taste. Cut beef into 4 (1/2-inch) thick slices then pound out using the teeth side of a meat mallet. This tenderizes the meat. Dredge each piece of meat in the seasoned flour, then in the seasoned buttermilk and back into the flour, allowing excess to drip off. Set out on a rack fitted over a baking sheet and allow to rest in the refrigerator for 20 to 25 minutes before cooking.
Add about 2 inches vegetable oil to a large cast iron pan and heat over medium-high heat to 365 degrees F. Once heated and working in batches, fry steaks 2 to 3 at a time until golden brown, about 3 to 4 minutes per side. Remove steaks and drain on a paper towels.
Carefully remove some the fat from the cast iron pan, reserving 1/4 cup. With the pan over medium heat, sprinkle in 3 tablespoons of flour and whisk to make a roux, scraping up any brown bits on the bottom of the pan. Once the flour has been fully incorporated slowly add the buttermilk and milk and continue to whisk until the gravy is nice and thick. Season well with salt and plenty ground black pepper, then whisk in hot sauce, to taste. Place the steaks on a serving platter, top with gravy and serve

OLD SCHOOL CHICKEN FRIED STEAK (MY BIRTHDAY MONTH FAVORITE RECIPES)
This is a simple and quick recipe for old school chicken fried steak with white cream skillet gravy

It's so so easy and filling
Recipe
2 round steak cutlets
1 whole eggs
2 cup buttermilk
Salt and pepper
Mix eggs and 1:2 cup milk in bowl
Season meat with salt and pepper
Bread with flour/egg milk /flour
Fry in hot oil until golden brown on each side
Remove from skillet
FOR THE GRAVY:
Drain all oil leaving 1/3 cup oil in skillet
Add 2 tablespoons flour and stir 2 minutes
Add 1 1/2 cups whole milk and cook until thickened
Season with salt and pepper and remove from heat
Pour over meat and ENJOY!!
