Welcome to our channel! In this video, we will show you how to make the most delicious Coffee Chip Cookies. These cookies are loaded with butter, sugar, and brown sugar, giving them a rich and indulgent flavor.
To start, we will combine the butter, sugar, and brown sugar in a mixing bowl. We'll beat them together until they are light and creamy. Next, we'll add the eggs and vanilla extract, giving our cookies a lovely aroma.
For an extra kick of flavor, we'll stir in some instant coffee granules. This will give our cookies a subtle coffee taste that pairs perfectly with the sweetness of the chocolate chips. Speaking of chocolate chips, we'll fold in a generous amount of semisweet chocolate chips into our dough.
In a separate bowl, we'll whisk together the flour, baking soda, and salt. We'll gradually add this dry mixture to our wet ingredients, mixing until just combined.
Now it's time to shape our cookies. We'll scoop out spoonfuls of dough onto a lined baking sheet, making sure to leave some space between each cookie. This will allow them to spread and bake evenly.

Coffee Infused Chocolate Chip Cookies Recipe. Welcome Friends! Welcome back to the
kitchen today we're going to make a coffee infused chocolate chip cookie Recipe and
we're going to use a little bit of science and technology to help us get the
flavours and texture of this chocolate chip cookie recipe to be the absolute best! You can buy the CMC from @Modernist_Pantry
Ingredients
285g butter
35g coffee beans
½ vanilla bean, split and scraped
225g dark brown sugar
185g white sugar
2 eggs
325g all purpose flour
30 mL (2 Tbsp) tapioca starch
12g (2½ tsp) salt
5g (1 tsp) baking soda
7 mL (1½ tsp) Carboxymethylcellulose (CMC)
250g semi sweet chocolate chips
Method:
Preheat oven to 325°F and a water bath to 180°F.
Place the butter, coffee beans, and vanilla bean into a vacuum seal bag; seal and cook in the 180ºF water bath for 1 hour.
(If you don't have a vacuum sealer, a Ziplock bag will work almost as well.)
After an hour remove the infused butter from the water bath and strain through a fine mesh strainer.
Allow the infused butter to cool to around room temp.
Mix together the flour, tapioca starch, baking soda, carboxymethylcellulose, and salt.
Cream together infused butter, brown sugar, and white sugar, until light and fluffy.
Cream in the eggs one at a time.
Mix in flour mixture until it forms a smooth dough.
Mix in the chocolate chips.
Scoop the cookie dough onto a cookie sheet and bake 15-18 minutes - or until cooked.

Commercial kitchens, and recipe developers rely on ‘Bakers Percentage’ to work out what a baking recipe should be. Pretty much every Baking recipe (cakes, cookies, bread, etc) have a base formula that is known to work and give a certain result. Recipe developers take these ‘knowns’ and manipulate the percentages to create new recipes.
Baker’s Percentage is expressing all the ingredient amounts by weight as a percentage of the weight of the flour… not that complicated, but we’ll do a video in the future all about that.
In the end - we change the proportion of butter and sugar to get a cookie that is chewy, crispy, or cakey.
