1/4 c Margarine; melted
3/4 c Applesauce; at room
-temperature 1 Egg white; whipped
1/4 c Cocoa powder; sifted
1 1/4 c Unbleached flour
1 c Granulated sugar
3/4 c Baking soda
1/2 ts Cinnamon
1/4 ts Salt

Preheat oven at 350. Prepare a 9" square pan with cooking spray and flour. In a mixing bowl, combine, margarine, applesauce, and egg white. In another mixing bowl, combine cocoa powder, flour, sugar, baking soda, cinnamon, and salt. Mix wet ingredients with dry ingredients just until moistened. Pour batter into prepared pan. This 1938 Golden Spice Cake Recipe - is a winner. It creates a nice moist snack cake for just about any occasion. Feel free to tweak the spices to suit your palate.
Ingredients:
2 ¼ cups sifted cake flour
1 tsp baking soda
½ tsp ground cloves
½ tsp ground cinnamon
½ tsp salt
¼ tsp ground nutmeg
½ cup butter, softened
1 cup sugar
1 egg
1 Tbsp molasses
1 cup cultured buttermilk
Method:
Preheat oven to 350ºF
Mix together the dry ingredients: flour, cloves, cinnamon, nutmeg, soda and salt.
Cream the butter and sugar.
Beat in the egg, and then the molasses.
Add some of the flour, then some of the milk; alternating between.
Scrape into a greased 8x8” cake pan and bake for 45-50 minutes.

If you’re looking for a rich, fudgy chocolate cake to satisfy your sweet cravings, then this cake IS IT! Paired with an indulgent chocolate fudge frosting, this is by far the best chocolate cake I’ve ever had.
INGREDIENTS:
Chocolate Cake
- 1½ cups (190 g) flour - regular all purpose
- ½ cup (50 g) cocoa powder - unsweetened
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup (170 g) unsalted butter
- 1¼ cups (200 g) dark chocolate (50%)
- ⅓ cup (80 g) milk - room temperature
- 1½ cups (300 g) white sugar
- 1½ tbsp instant coffee powder
- ¼ cup (55 g) unflavoured vegetable oil - I use canola oil
- 1 tsp vanilla essence/extract
- 2 large eggs - room temperature
- ½ cup (110 g) hot water
Bake at 160 °C (320°F) with the fan on. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F). Remember to grease the bottom and sides of two 8 inch cake tins (mine are 3 inch deep), and also line the bottom of the tin with baking/parchment paper.
IMPORTANT: Do not open the oven door too early to check the cake otherwise this can cause the cake to sink in the middle. Enjoy :)

- 4 tsp cocoa powder - unsweetened
- 2½ cups (400 g) dark chocolate (50%)
- 1 cup (226 g) unsalted butter

- ½ tsp instant coffee powder
- ½ tsp salt
- 2 tsp vanilla essence/extract

1929 Chocolate Spice Cake! Decadent Ghirardelli with White Frosting!
This cake gave us brownie vibes with it's rich chocolaty taste and decadent white frosting. It's cavity inducing for sure but so good! The Ghirardelli cocoa powder really shined through and the white frosting was the best I've ever had! (I used a blog recipe which I will link below) If you make this, please don't skip the frosting. It's really what made this cake and elevated it to the next level!!
What you'll need:
2 c Pastry Flour- I used Swan's Down
1 c Sugar (white or brown)-- I used white
1/2 c Ghirardelli's Baking Powder
2 tsp Baking Powder
1/2 tsp Soda
1/2 tsp Salt
1 tsp Cinnamon
1/2 tsp Cloves
1/4 tsp Nutmeg
3/4 c Milk
2 eggs, unbeaten
1/2 c Melted Butter
1/2 c Chopped Walnuts
Sift together 3 times all the dry ingredients. Stir in milk, eggs and butter. Beat 2 minutes. Add nuts and bake in greased loaf pan for 50-60 minutes at 350 degrees. When cool, spread with frosting and sprinkle with additional 1/4 c chopped nuts.

Recipe Tips:
* Buttermilk substitute: Add 1 tbs of vinegar or lemon juice into to a measuring cup. Pour milk in up to the one cup mark. Let sit 5 -10 minutes. Video
* If using a darker pan, reduce temperature 25F (4C) and bake an additional 2 - 5 minutes to prevent over browning.
* Bake cake until center reads between 200-210F (93-93C.)
