How To make Cocoa Cream Filled Sponge Cake
CAKE: 7 large eggs
separate out yolks
1/4 teaspoon salt
1 1/4 cups sugar
2 tablespoons water
1 tablespoon orange juice
1/3 cup cocoa
1/4 cup cake meal
1/4 cup potato starch
1/2 cup ground almonds
1/2 cup strawberry preserves :
see note
COCOA CREAM: 1/2 cup sugar
1/4 cup cocoa sift
1 cup whipping cream :
cold
1 teaspoon vanilla extract
OVEN: 325 Ungreased 10-inch tube pan
CAKE: In large mixer bowl, beat egg whites with salt on MEDIUM speed of an electric mixer til soft peaks form. Gradually add 1 cup sugar, beating on HIGH speed til stiff peaks form. Set aside.
In small mixer bowl, beat egg yolks til blended. Gradually add remaining 1/4 cup sugar. Continue beating til thick and lemon colored, about 3 minutes.
Add water and orange juice; blend well. Gradually add egg yolk mixture to egg whites, folding with rubber spatula til blended.
In sieve, place cocoa, cake meal and potato starch. Gradually sift over egg mixture, folding gently til blended. Fold in almonds.
Spoon batter into pan. Bake 50 to 55 minutes or til cake springs back when touched lightly near center. Immediately invert pan on heatproof funnel or bottle. Cool completely.
Carefully run knife along sides of pan to loosen cake; remove from pan. With long serrated knife, split cake horizontally into thirds. Spread preserves between layers. Garnish with heaping spoonful of COCOA CREAM.
COCOA CREAM: In a small mixer bowl, stir together sugar and cocoa. Sift together. Add whipping cream and vanilla. Beat til slightly stiffened. Makes about 2 cups.

Ingredients:
Soft sponge cake:
4 egg yolks (large)
1/4 cup granulated sugar
1/4 cup oil
1/4 cup milk
1 tsp vanilla
1 cup all purpose flour
1/2 tsp salt
1 tsp baking powder
4 egg whites (large)
1 tsp cream of tartar
1/3 cup sugar

makes 4 4x2 inch cake
Creamcheese filling:
225g cream cheese (room temp)
1/4 sugar
200g non dairy whip topping

good to decorate 2 cakes
Sugar syrup
1 cup sugar
1 1/2 cup water
Boil for 2 minutes and let it cool
Bake in a preheated oven at 170c for 25 - 30 minutes

* Ingredients
60g (4.5 tbsp) Cooking oil
80g (1/3 cup) Milk
100g (3/4 cup) Cake flour
6 Eggs
1.25ml (1/4 tsp) Vanilla extract
2g Lemon juice
65g (5 tbsp) Sugar
100g Mascarpone cheese
18g (1.5 tbsp) Sugar
1.25ml (1/4 tsp) Vanilla extract
120g (1/2 cup) Heavy whipping cream
Cake pan size: 25x40cm
170°C (340°F) Bake for 35 minutes
Refrigerate for about 1 hour
* Important tips:
1. If you don't like vanilla extract, you can omit it.
2. The main reason for the skin to fall off is not baked through, the surface is too wet so the skin will fall off when rolled later. To avoid falling off, you can increase the baking time, or bake at high temperature for 10 more minutes. If your oven has a fan function, please use the fan function to bake, so the surface is easy to dry.
3. There are two reasons for the cracking: one is that the egg whites are too dry, and the second reason is that the baking temperature is too high. Therefore, when whipping the egg whites, try to whip them a little soft, wet foam, and the whisk is a big hook. Because this baking pan is relatively large, so the chance of cracking is very small, you can use a relatively high temperature to bake.
4. Do not wait for the roll to cool down before rolling, when the temperature of the cake roll is close to hand temperature you can do, it is easier to crack the roll after it cools down
5. If you don't have mascarpone cheese, you can use cream cheese instead!
6. Refrigerate for about 1 hour then to cut and enjoy!

I've been searching for this light, airy CHOCOLATE SPONGE CAKE recipe for years

This better than bakery chocolate sponge cake recipe is light, airy, moist and just straight up DELICIOUS! Paired with my homemade raspberry jam filling, and chocolate whipped cream, you are going to simply fall in love with this cake! This recipe is based on my original light and airy sponge cake ????
INGREDIENTS:
Sponge Cake
- 2 tbsp (15 g) flour - regular, all purpose (see note 1 on blog post)
- ⅓ cup (40 g) cornstarch
- ¼ tsp baking powder
- 2 tbsp (16 g) cocoa powder - unsweetened
- 1 tsp instant coffee powder
- ¼ tsp salt
- 4 large eggs - whites and yolks separated, room temperature
- ⅛ tsp white vinegar
- ⅔ cup (132 g) white granulated sugar - separated in half (1/3 for the egg whites & 1/3 for the egg yolk mixture)
- 1½ tbsp warm water - not boiling
- 2 tsp vanilla essence/extract
- 2 tbsp (30 g) unflavoured vegetable oil - I use canola
Bake at 160 °C (320°F) with the fan on for 20 minutes. If you don't have a fan oven, bake at 175 °C (347°F).
Simple Syrup
- ¼ cup (50 g) white granulated sugar
- ¼ cup (55 g) boiling water
Whipping Cream
- 2 cups (375 g) cold whipping cream
- 3 tbsp (28 g) icing sugar - also known as confectioners sugar/powdered sugar
- 3 tbsp (22 g) cocoa powder - unsweetened
- ½ tsp vanilla essence/extract
- 1 punnet fresh strawberries for decorating
