Epic French Toast
Ingredients:
2/3 cup half-and-half
1 large egg
4 slices Trader Joe’s cinnamon swirl bread (or other bread, preferably slightly stale and sliced fairly thick)
Optional add-ins: ½ teaspoon vanilla extract; pinch of cinnamon
For serving: pure maple syrup, whipped cream, or fruit
Instructions:
Melt a pat of butter on a griddle over medium heat.
Pour the half-and-half and egg in a pie plate or shallow bowl; whisk to combine. Add vanilla and cinnamon if using, and whisk again. Dip one slice of bread in the egg mixture and let it soak for a few seconds; then flip and soak the other side.
Pick up the soaked bread and let any excess liquid or egg drain off. Place the soaked bread on the hot griddle and cook until golden brown, about 3 minutes. Flip, and cook the other side until golden brown, about 3-4 minutes.
Serve, warm, with maple syrup or whipped cream and fruit. This French Toast is also good with nothing, as the cinnamon and sugar give it plenty of flavor!
Make-ahead tip #1: The custard (half-and-half, egg and vanilla) can be whisked together the night before and stored in the refrigerator. Similarly, if you only make 1 or 2 slices of French Toast and have left over custard, the custard can be stored in the refrigerator and used again the next day.
Make-ahead tip #2: This French Toast can be made the night before, cooled and refrigerated, and then reheated in the microwave and served the next morning.
French Toast
Today I’m making my classic French Toast. The results are golden brown and slightly crispy on the exterior and pillowy soft on the interior—the perfect French Toast recipe.

French Toast
12 slices brioche bread (Texas Toast works well too!)
6 eggs
1 ½ c. milk
½ c. half & half (or substitute an additional ½ c. milk)
1 tsp. cinnamon
2 Tbsp. sugar
1 tsp. vanilla extract (I was out of vanilla when I filmed this, but it adds great flavor if you have it!)

In a glass baking dish or pie plate, whisk together the 6 eggs. Add the milk, half & half, cinnamon, sugar, and vanilla. Whisk to evenly incorporate all ingredients. Preheat skillet or griddle to medium low (my griddle was on #4). Butter the surface of the griddle. Take a slice of bread and dunk it in the egg mixture for about 7 seconds then flip to the other side for another 7 seconds (thinner bread will take less time--don't over soak!). Transfer immediately to the griddle. Cook over medium low heat for about 2 minutes on the first side or until golden brown. Flip and continue to cook for another 1-2 minutes or until golden brown. Serve with butter and maple syrup. ENJOY!

•Apple Filling (will make enough for 20-25 roll ups)

1 cup granulated sugar
3/4 cup brown sugar
1 cup water
