Homemade Moist CHOCOLATE RUM CAKE | Recipes.net
Make chocolate cake adults will surely enjoy! This homemade moist chocolate rum cake combines the rich flavor of chocolate and the toasted sugar taste of rum. It's a dessert your family and friends won't get enough of.

Ingredients:
1 cup unsalted butter, softened
2 cups sugar
4 large eggs
½ cup dark rum
2 cups all-purpose flour
1 cup unsweetened cocoa
1 tsp baking powder
1 tsp baking soda
½ tsp salt
⅛ tsp ground nutmeg
1 cup hot water
1 tsp almond extract
1 tsp vanilla extract
3 cups chocolate mousse icing
For Garnish:
chocolate shavings
⬇️ How to make Chocolate Rum Cake ⬇️
0:09 Preheat oven to 350 degrees F.
0:16 Beat butter in a bowl with an electric mixer until fluffy. Add sugar to butter, beating well.
0:31 Beat in the eggs one at a time along with rum until blended.
0:57 Sift and combine flour and the rest of the dry ingredients, then add to the sugar mixture in 5 separate portions, pouring a bit of hot water in between each portion.
1:25 Beat mixture at low speed until well blended, then stir in the vanilla and almond extracts.
1:50 Pour batter into a greased and floured round cake pan.
1:53 Bake for around 27 minutes, then let cool for 10 minutes. Remove cake layers from the pans and let cool on wire racks.
2:05 Spread 1 cup frosting atop the bottom cake layer and stack the next cake on top of each other. Frost the cake's exterior with the remaining frosting.
2:22 Chill in the refrigerator, garnish with chocolate shavings and serve.

Slutty Wendys Rum Cake: The Most Decadent and Boozy Cake!
Spookie is my brother’s godmother, and has been a part of my life ever since I was born. A traveller, adventurer, and always filled with stories and a wink, I remember her teaching me how to cut cards during gin rummy and calling me a “Cheatin’ Charlie” if I ever won a board game. Her humor and wit are only out-classed by her heart, and her deep abiding passion for all creatures, including two adorable rescue dogs named Minky and Scallywag, has always had a great effect on me.
Spookie didn’t bake or cook, but she did have one go-to recipe: her rum cake. This was the most exotic, luscious, delicious cake that ever captured an eight year-old’s mind. She visited my family for a weekend while I was recipe testing, so it was the perfect opportunity to pick her brain for details. When I asked her how she came across the recipe, her answer, like almost everything about Spookie, was unexpected. “Well, when I was a black jack dealer in Vegas, I had this room mate named Wendy. She’d trot this rum cake out all the time, I’m pretty sure it’s the only thing she could make. Then she hooked up with my boyfriend, so I started referring to it as ‘Slutty Wendy’s Rum Cake.’”
Here I thought it was an old Irish or Aussie recipe passed down over the generations.
Using box cake mix, pudding straight from the pack, and a few other odds and ends, this cake is sticky, sweet, and completely delicious.

The cake is so good, perfectly soaked, very easy to make!
Number of servings: 12
For the chocolate cake:
-6 eggs
-100 g sugar
-40 ml water
-40 ml oil
-3 tbsp cocoa
-200 g flour
-5 g baking powder
-2 g instant coffee
-1 pinch of salt
For the syrup:
-100 g sugar
-130 ml of water
-2 tbsp cocoa
-3-4 drops of rum extract
-25 g butter
For the chocolate buttercream:
-130 g caster sugar
-300 g butter, softened
-4 tbsp cocoa powder
-3 egg yolks
For the frosting:
-300 ml whipping cream
-250 g dark chocolate

Chocolate Rum Cake with a Kick
You don't want just any old rum cake, do you? I mean, what's life without a little controversy. (Can a cake be controversial?) Anyway, I didn't want to just come up with a plain ol' rum cake, no I had to go all crazy (maybe a little controversial) and make a chocolate rum cake with a kick.
I know what you're asking...what's the kick? Are you sure you want to know? You have to promise me you'll just give it a chance before saying no way.
Ok, the kick is cayenne pepper powder. (Oh, the controversy.) Yeah, I know it sounds a little strange, but it really works well with the chocolate and no, it doesn't make the cake spicy hot...promise.
This cake is moist with a really chocolaty flavor and a good helping of rum with just a hint of spice to it. Try it! I think you'll love it.
