Ingredients for Chilli Chicken Recipe:
Boneless Chicken, (preferably thigh) cut into 1 inch pieces - 500 gms
For marination:
- Crushed Pepper - 3/4 tsp
- Salt- 3/4 tsp
- Cornflour- 3 tbsp
- All purpose flour (Maida)- 2 tbsp
- Soy sauce- 1 tsp
- Ginger garlic paste- 1 tsp
- Egg - 1
- Oil- 1 tsp
Sauces & Spice Powder :
- Dark Soy sauce- 1 tbsp
- Green Chilli sauce- 2 tbsp
- White Vinegar- 1.5 tsp
- Crushed Pepper- pinch or 1/4 tsp
- Salt- pinch
Other Ingredients:
- Garlic, chopped- 3 tsp
- Ginger chopped- 2 tsp
- Spring onion, white portion chopped- 3 tbsp
- Green chillies, thin slices- 3-4 nos
- Onion thick slices- 2 small onion ( 100 gms)
- Green capsicum thick slices- 1 medium ( 80 gms)
- Cornflour slurry- 1 tbsp cornflour mixed in 2 tbsp of water
- Spring onions, green tops- chopped for garnishing 3-4 tbsp
- Oil- 2 tbsp
- Salt for seasoning
Preparation:
- Wash and cut the boneless chicken into 1 inch pieces.
- Marinate with the items indicated. Mix well and set aside for 30 mins.
- Chop the garlic, ginger and spring onions, thick slice the onions & capsicum (green pepper) and thin slice the green chillies.
- Deep fry the chicken pieces in a kadhai till golden in colour. ( total 4-5 mins)Remove and set aside
Process:
- Heat oil in a pan or skillet for deep frying. Drop the battered chicken pieces side by side in hot oil to not overcrowd the pan. Do not stir for 1 min.
- Fry these in hot oil on medium heat till light brown. This should take around 4-5 mins. Repeat for the next batch.
- Take a small wok or kadhai & heat 2 tbsp oil.
- Add the chopped garlic and ginger, stir for 30 seconds and add the white chopped spring onions.
- Stir it for 30 secs & add the diced onions & green chillies. Fry on medium heat for 1-2 mins and then add the capsicum slices.
- Add a pinch of salt and pepper each.
- Sauté on medium heat for around 2 mins or less till they are still crisp.
- Add the fried chicken pieces and fry 1 min on medium heat.
- Now add all the sauces and mix well. Stir fry for 1 min on high heat.
- Add the cornflour slurry and mix well again. Add little water if required.
- Stir fry for 1 min & garnish with chopped spring onion greens.
- Mix and stir for 1 min on high heat and serve hot.

Chilli chicken recipe: Chilli chicken is perhaps the most popular Indo-Chinese dish found both in restaurants and street side stalls. No visit to Calcutta's Chinatowns (especially Tangra) is complete without an order of chilli chicken. The dry chilli chicken works as a snack, appetiser as well as a side. The gravy chilli chicken is more popular as a side to either chowmein or with fried rice. There are various versions of the chilli chicken recipes. While you can play around with the sauces you like in your chilli chicken, most folks will agree that the best chilli chicken has the chicken still crispy when served. With that goal in mind we tested both the wet batter as well as the dry breading technique and finally went with breading. What yielded the crunchiest chicken was Kenji Lopez-Alt's method ( which he had used in his General Tso's Chicken recipe in Serious Eats Food Lab. Do give this a try and let us know how it goes!

Spicy Garlic Chicken Recipe:
Marination:
Chicken (Boneless cubes) - 300 grams
Ginger Garlic Paste - 1 tbsp
Lemon Juice - ½ no
Salt - ½ tsp
Black Pepper Powder - ½ tsp
Red Chilli Powder - ½ tsp
Other Ingredients:
Oil - 2 tbsp + 2 tbsp
Garlic (finely chopped) - 3 tbsp
Red Chilli Powder - ½ tsp
Black Pepper Powder - ½ tsp
Salt - ¼ tsp
Tomato Ketchup - ¼ Cup
Soy Sauce - 1 tsp
Water - ¼ Cup
Coriander leaves (chopped) - 2 tbsp
Cooking Instructions:
1. Marinate the chicken with all the required ingredients. Set aside for 10 minutes.
2. Heat 2 tbsp oil in a pan. Add the chicken and cook for 5 minutes, flipping it occasionally. Set this aside.
3. Heat oil in another pan. Add the garlic and saute on medium heat until golden brown. Add water, red chilli powder, pepper powder, salt, ketchup and soy sauce.
4. Add the chicken and cook until the sauce coats the chicken well.
5. Garnish with coriander leaves and serve.

-Chicken (Cut in thin strips) 500 gms
-Maida (All-purpose flour) 2 tbs
-Corn flour 2 tbs
-Anda (Egg) 1
-Namak (Salt) ½ tsp
-Soy sauce 1 tbs
-Lal mirch kuti huee (Red chili flakes) 1 tsp
-Oil for frying
-Oil 1 tbs
-Lehsan (Garlic) chopped 1 tbs
-Lal mirch (Red chilies) chopped 3-4
-Hara pyaz (Green onion) White root 1 tbs
-Soy sauce 1 tbs
-Chili sauce 1 tbs
-Tomato paste 2 tbs
-Pani (Water) ¼ cup
-Shahad (Honey) 2 & ½ tbs
-Namak (Salt) 1-2 pinch
-Lemon juice 1 tbs
-Till (Sesame seeds) Toasted
-Hara pyaz (Green onion) Stalk 1-2 tbs
Directions:
-In bowl,add chicken thin strips,all-purpose flour,corn flour,egg,salt,soy sauce and red chili flakes, mix well.
-In wok,add oil and chicken strips,fry until golden and crispy,set aside.
-In wok,add oil,garlic,red chilies and green onion white root, sauté until light brown.
-Add soy sauce,chili sauce,tomato paste and water,mix well.
-Add honey,salt and lemon juice,mix.
-Add fried chicken and mix well.
-Sprinkle sesame seeds and green onion stalk.
-Crispy honey chili chicken is ready.
