black pepper - 7 g (0.25 oz)
for the filling:
cheese cream - 100 g (3.5 oz)
hard cheese -100 g (3.5 oz)
spinach - 200 g (7 oz)
granulated garlic - 5 g (0.18 oz)
tomato - 1 piece
for the sauce:
mayonnaise - 50 g (1.76 oz)
mustard - 25 g (0.9 oz)
IN THE OVEN 180 °C (356 °F)/25 minutes
hard cheese with parsley - 200 g (7 oz)
IN THE OVEN 180 °C (356 °F)/10 minutes
for the salad:
French baguette - 1 piece
olive oil - 25 ml (0.85 fl oz)
Fry over medium fire 5 min
cucumbers - 2 pieces
cherry tomatoes - 200 g (7 oz)
basil - 40 g (1.4 oz)
mozzarella - 80 g (2.82 oz)
red onion - 1 piece
olive oil - 15 ml (1 tbsp)
salt - 5 g (0.18 oz)
lemon juice - 15 ml (1 tbsp)

Mediterranean chicken with assortment of veggies rolled up in a spinach wrap
CHICKEN FLORENTINE WRAP
YIELD 2 whole wraps
INGREDIENTS
2 spinach wraps
2 tsp fresh pesto
3 tbsp extra virgin olive oil
2 tsp fresh minced garlic
8 -10 oz trimmed chicken breast
2 tbsp balsamic or red wine vinegar
1/2 tsp salt
1/4 tsp black pepper
PROCEDURE
In a large bowl put the pesto, garlic, olive oil, salt, pepper and red wine or balsamic vinegar. Whisk together. Put the chicken breast into the marinade, coating well. **At the very least, marinate the chicken in olive oil and vinegar, salt & pepper. Allow to marinate for at least one hour and up to 24 hours. Heat a skillet for about 5 minutes over med-high heat. Remove the chicken from the marinade and carefully place into the hot pan. Be careful because the pan is quite warm and the marinade will splatter onto you, so be careful. Lower the heat to medium. Leave the chicken alone for about 5 minutes, so that it browns, therefore having better flavor. Turn it over and continue cooking until it is completely cooked through. Check by cutting into the center to see if there is any blood. Remove to a plate and keep warm.
CONT'D INGREDIENTS
2 cups baby spinach leaves
2-3 roma tomatoes, diced
1 tbsp chopped sun dried tomatoes
1-2 tbsp pesto
½ cup sliced artichoke bottoms or diced hearts
¼ cup kalamata olives, sliced
very thinly sliced red onion, a few rings
¼ cup feta cheese, crumbled
1 cup shredded mozzarella cheese
2-4 tbsp extra virgin olive oil
1 tbsp red wine or balsamic vinegar
½ tsp salt
¼ tsp fresh ground pepper
PROCEDURE
Cut the chicken into strips. Put the spinach, tomatoes, red onion, artichokes, olives, sun-dried tomatoes, feta, mozzarella and chicken strips into a bowl and drizzle in both the olive oil and vinegar. Add the pesto and work into the “salad”. Season with salt and fresh ground black pepper and toss.
This actually is a great salad, as is, but inside the spinach wrap, its even better. This works great with chicken Caesar salad, too, in either a spinach or sun-dried tomato wrap.

Lay the wraps out and put half of the mixture onto each one and roll up. Put into the microwave for 30-60 seconds. If you would rather have it be cold, don’t heat them up.
